No Bake Black Cherry & Waffle Parfait

Cherries are a favorite summer fruit of mine. My sister and I would eat them cold, one by one, until our small lips were covered with cherry juice and we had a dish full of pits.


I’ve never been a fan of room-temperature cherries. They’re simply better cold.

But it has nothing to do with this parfait, since the cherry are cooked into the most beautiful spoon fruits using a rapid sautée process. If you want to make a large quantity, you can simply double this recipe and keep half to sprinkle over yogurt in the morning or spread over toast.


Summer is in full swing when every time you walk down a city street, a drop of chilly water from the sprinkling of air conditioners in the high rises above you has the potential to strike your head at any point.

And the last thing you want to do when that time arrives is return to your apartment and turn on the stove. So this month, I’ve been focusing on creating as few oven dishes as possible. One of them is this no-bake Cherry & Waffle Parfait.


I bought my waffles from Whole Foods’ bakery aisle, which made assembling these parfaits a snap. It’s the ideal way to cap off a light summer meal. Or the ideal way to start a hot summer day. Whatever makes you happy.



For the cherries that were quickly sautéed

  • 3 cups pitted black cherries (save a few whole cherries for garnishing on top)
  • a quarter cup of lemon juice
  • a quarter cup of granulated sugar

For the remainder,

  • 2 quarts of thick cream
  • a quarter cup of granulated sugar
  • 8 Belgian waffles, strewn together


Combine cherries, lemon juice, and sugar in a medium saucepan over low heat. To break down the cherries, softly smoosh them with a fork. Cook, stirring periodically, for approximately 20 minutes, or until cherries soften and liquid thickens and evaporates nearly completely. Before constructing parfaits, let to cool to room temperature.

Whip heavy cream and sugar to soft peaks with a stand mixer or with a hand mixer. Fill glasses halfway with whipped cream, Belgian waffle pieces, and fast sautéed cherries, then top with whole cherries and serve!
