Morning glory muffins resemble a cross between a spice cake, carrot cake, and apple bread, but (believe it or not) they’re even better! They’re a “hearty and healthy” muffin, akin to a bran muffin, in my opinion. But don’t be put off by this. These muffins taste just as good as chocolate chip or banana muffins.

Plus, owing to all those fresh fruits and vegetables that give moisture and sweetness, they’re lower in oil and sugar than a standard muffin recipe. While I like a nice buttery blueberry muffin, these morning glory muffins are a healthier option. They’ll keep your stomach full and fed so you can get your day started correctly. They also taste pretty darn nice, which helps.

If you want to lighten these up even further, try using apple sauce for part of the oil and coconut sugar, honey, or maple syrup for the brown sugar!

Ingredients

  • a quarter cup of vegetable oil
  • 1 cup packed brown sugar
  • 3 room-temperature eggs
  • 2 cups carrots, shredded, packed
  • 1 cup apple shredded
  • vanilla extract (two tablespoons)
  • a quarter cup of orange juice
  • 1 1/4 cup flour (whole wheat)
  • 1 cup flour made from oats
  • 1 1/2 teaspoons bicarbonate of soda
  • baking powder (1/2 teaspoon)
  • a half teaspoon of salt
  • 2 tablespoons cinnamon powder
  • a quarter teaspoon of ginger
  • a quarter teaspoon of nutmeg
  • a half cup of raisins
  • Optional: 1/2 cup unsweetened shredded coconut

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit and prepare 24 muffin cups with paper liners. Set aside the muffin pans with greased tops.
  2. Combine the vegetable oil, brown sugar, and eggs in a large mixing basin. Toss everything together with a whisk. Combine the carrots, apples, vanilla, and orange juice in a mixing bowl.
  3. Whisk together the oat flour, whole wheat flour, baking soda, baking powder, salt, and spices with the wet ingredients. Don’t overmix the ingredients. If using, fold in the raisins and coconut.
  4. Scoop 1/3 cup batter into each prepared muffin cup and bake for 5 minutes at 425°F. After 5 minutes, reduce the oven temperature to 375° and bake for another 12 minutes, or until the muffins spring back when touched and a knife inserted into the center comes out largely clean.
  5. Allow the muffins to cool completely before eating.
