While I like a nice buttery blueberry muffin, these morning glory muffins are a healthier option. They’ll keep your stomach full and fed so you can get your day started correctly. They also taste pretty darn nice, which helps.

  • a quarter cup of vegetable oil

  1. Preheat the oven to 425 degrees Fahrenheit and prepare 24 muffin cups with paper liners. Set aside the muffin pans with greased tops.
  2. Combine the vegetable oil, brown sugar, and eggs in a large mixing basin. Toss everything together with a whisk. Combine the carrots, apples, vanilla, and orange juice in a mixing bowl.
  3. Whisk together the oat flour, whole wheat flour, baking soda, baking powder, salt, and spices with the wet ingredients. Don’t overmix the ingredients. If using, fold in the raisins and coconut.
  4. Scoop 1/3 cup batter into each prepared muffin cup and bake for 5 minutes at 425°F. After 5 minutes, reduce the oven temperature to 375° and bake for another 12 minutes, or until the muffins spring back when touched and a knife inserted into the center comes out largely clean.
  5. Allow the muffins to cool completely before eating.
