In the 1950s, there was a fad for morning glory muffins. They were often made with grapes and raisins and sometimes even chocolate chips!

I wanted to make some delicious muffins today, but I didn’t want them to be too sweet, so I created my own version of morning glory muffins, which are often prepared with wheat, cinnamon, apple, pineapple, carrots, raisins, fruit, and coconut. It tastes like a mix of carrot cake and bran muffins. Bran, oatmeal, cinnamon, raisin, carrots, pineapple, and blueberries are all in my version! I wasn’t expecting much from them; maybe a nice afternoon snack, but not a blog article. But I was so happy with how they came out after testing them that I had to share them! Seriously, these are some of the finest muffins I’ve ever tasted, and they’re without a doubt the best muffins I’ve ever devised a recipe for. So, if I were you, I’d gather some ingredients, fire up the oven, and get to work.

Ingredients

  • 1 pound of flour
  • 1/2 cup oats, old fashioned
  • 1/2 cup bran powder, emulsified
  • 2/3 cup shredded carrots
  • 1/3 cup pineapple chunks
  • a half cup of raisins
  • a half cup of blueberries
  • 1 unsalted butter stick (at room temperature)
  • 1/3 cup sugar, granulated
  • brown sugar, 1/3 cup
  • 2 room temperature eggs
  • 1 teaspoon bicarbonate of soda
  • a half teaspoon of salt
  • 1 teaspoon extract de vanille

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Cupcake liners should be used to line 12 cupcake molds.
  • 2 minutes using an electric mixer, whip the butter and sugars together in a medium mixing basin. The eggs should be added one at a time, followed by the vanilla essence.
  • Combine the flour, oats, bran powder, baking soda, and salt in a separate basin. Combine the egg and flour mixture in a mixing bowl. Add the pineapple and carrots after that. Finally, mix in the blueberries and raisins carefully.
  • Fill the cupcake molds halfway with batter. Sprinkle a few additional oats on top of the muffin for decoration if desired. Bake for 30 minutes, or until a knife inserted into the muffins comes out clean. Enjoy!
