This week is National Mojito Day, and if you’re looking for a fun way to celebrate the occasion then look no further than these mojito cupcakes covered in mint leaves with lime zest. They are easy enough to make that even your non-cake baking friends can get involved!
The “mojito cupcakes my cafe” is a new restaurant in Toronto that has many different types of Mojito cupcakes. The restaurant also offers a variety of other desserts and drinks. It’s a great place to go for your birthday or just because you want some dessert.
My last day at the bakery was yesterday. Because of the mojito cupcakes, it was the nicest farewell ever:). Here’s a quick rundown…
First and foremost, boozy cupcakes. Why hadn’t I thought of it before? You know who did it, right? Emily is the manager. For my final day, she cooked them. It was the cutest thing ever. About be clear, I’m referring to boozey cupcakes with rum cream cheese icing and a rum and rum extract cake. Oh, and there’s also mint. Also, lime. As a result, this is essentially a cocktail in a cupcake. (Side note: I’m not sure why I never went to Sweet Revenge while I lived in the city.) Stupid, stupid, stupid…)
Chef Scott also sent me a note and this photograph. I was on the verge of collapsing from laughter.
It’s a fennel bulb, to be precise. Because my name is Fennel. He said he nearly drew a ginger root since I, too, am ginger, but ginger root is supposedly more difficult to draw. I’ve already hung the painting in my hallway, so it’s not a big deal. It’s much too incredible not to.
I’m going to miss work so much. I adore(d) it. The one advantage I see in this new arrangement is that I’ll be able to devote more time to the blog and to baking on my own. Let’s see what happens… Good luck to me!
