Another advantage of icebox cakes is that they may be stored in the freezer for a long period. If you don’t finish your mocha cookies and cream icebox cake all at once, wrap it securely in plastic wrap and store it in the freezer until you’re ready to enjoy it again! After two months in the freezer, our icebox cake began to taste a touch freezer burned. But I can assure you that yours will not endure that long.

Ingredients

For the cream cake and mocha cookies

  • 2 cups chocolate chips (semi-sweet)
  • 2 tblsp. powdered espresso
  • 3 quarts heavy cream (distributed)
  • 1 teaspoon extract de vanille
  • a quarter cup of powdered sugar
  • 1/2 cup of freshly brewed coffee
  • Oreo Cookies, Number 33

Whipped icing for the cookies and cream

  • 1/2 gallon heavy cream
  • a quarter cup of powdered sugar
  • 1 tablespoon crumbs from Oreo cookies (about 3 cookies)
  • Optional garnish: 10 Oreo cookies

Instructions

  1. In a microwave-safe dish, combine chocolate chips and espresso powder. Remove from the equation.
  2. 1 cup heavy cream, heated in a small saucepan over low heat until scorching (not boiling!). Remove the pan from the heat and pour the mixture over the chocolate chips.
  3. Allow 5 minutes for the ingredients to settle before stirring it together with a whisk. The chocolate should be completely melted at this time. If it isn’t, microwave it for 15 seconds while stirring. Fill a piping bag with the mixture and chill until ready to use.
  4. The remaining 2 cups of heavy cream should be whisked until soft peaks form in a standing mixer equipped with a whisk attachment. Mix in the powdered sugar, vanilla extract, and salt until well combined. Remove from the equation.
  5. Wrap plastic wrap over the inside of a standard-sized loaf pan on both sides. Working in stages, spoon and spread the whipped cream, pipe and distribute the ganache, then immerse Oreo biscuits in coffee before piling on top of the fudge, beginning with the whipped cream mixture. It’s entirely up to you how much whipped cream you spoon on each layer– if you want more, go for it! Do it! More chocolate!
  6. Continue layering until your loaf pan is filled, then top with whipped cream.
  7. Place in the freezer for at least 3 hours, covered with plastic wrap.
  8. Remove the icebox cake from the freezer when ready to serve. With a whisk, whip the heavy cream until medium-stiff peaks form. Mix in the powdered sugar well. Fold in the Oreo cookie crumbs last, making sure they’re uniformly distributed.
  9. Place the ice box cake on a serving tray after removing it from the loaf pan. Using a spoon, form large swirls in the whipped cream to resemble “frost.” Crumbled cookies may be sprinkled on top if desired. Slice and serve with a hot, sharp knife! Enjoy.
