What Exactly Is Vegan Mac & Cheese?

Vegan mac and cheese is much the same as conventional mac and cheese, so…pasta with a cheese sauce, obviously. BUT IT DOESN’T CONTAIN CHEESE. Nonetheless, it has the flavor of macaroni and cheese. We don’t mind what you make it with as long as it tastes well.

We’re revealing how to create cheese without cheese, and the secret ingredient is cashews.

What’s the Best Way to Make Vegan Mac & Cheese?

So, without cheese, how do you create cheesy pasta? Cashews and nutritional yeast are the solution.

I know, it seems insane, but bear with me. The soaked cashews give this vegan cheese its creamy, luscious texture, while nutritional yeast gives it all the cheesy flavor of the regular variety.

  • Bob’s Red Mill Nutritional Yeast is our favorite nutritional yeast. It’s what gives this sauce its cheesy taste, plus it’s high in vitamins and minerals!
  • Cashews, raw: The cashews will give this sauce the lovely smoothness that cheese and milk generally provide. Simply soak the cashews for a few minutes to soften them before blending them into a thick, creamy sauce.
  • Dairy-free milk: We used almond milk, but any nondairy milk with a neutral taste will suffice! I’d recommend cashew or pea milk, but I’d avoid soy milk.
  • We added garlic powder, chili powder, onion powder, and paprika to give this vegan mac and cheese the same rich taste profile as a combination of cheeses.

It tastes like home-cooked mac & cheese from the stovetop, but without the dairy cheese.

Pro tip: You can simply create this gluten-free vegan macaroni and cheese by using gluten-free pasta and breadcrumbs!

Ingredients

  • 2 cup cashews, raw and unsalted
  • Large elbow noodles, 16 oz
  • 3 cups almond milk (unsweetened)
  • 1 cup nutritional yeast from Bob’s Red Mill
  • salt (two tablespoons)
  • 2 tablespoons powdered garlic
  • 2 teaspoons powdered onion
  • 2 tblsp mustard (dijon)
  • a quarter teaspoon of chili powder
  • smoked paprika, 1/2 teaspoon
  • a half-cup of panko breadcrumbs
  • 1 tablespoon butter (vegan)
  • 1 teaspoon thyme, dry

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. For the pasta, bring a big pot of water to a rolling boil. Scoop out a cup of water and pour it over your cashews in a smaller dish. Soak cashews in water for 15 minutes or until tender.
  3. Cook for 7 minutes, or until pasta is al dente. You don’t want your pasta to be completely done since it will continue to cook in the oven. Drain and put aside the pasta.
  4. Combine all of the spices and salt in a small bowl.
  5. Transfer cashews to a blender or food processor after draining them. Combine the spices, nutritional yeast, and 2 cups almond milk in a mixing bowl. Blend on high until the mixture is creamy. Blend in the remaining cup of almond milk until smooth. Although the mixture will be thin, this is correct!
  6. Toss the spaghetti with the vegan cheese sauce, then pour into a baking pan (8′′x11′′ oval baking pan). Remove from the equation.
  7. In a small saucepan, melt the vegan butter over medium heat to form the breadcrumb topping. Cook until the panko breadcrumbs and thyme are aromatic and faintly browned. Sprinkle on top of the macaroni.
  8. Cook for 10 minutes, then remove from oven and cool slightly before serving!!!!!!
