Well, it’s a cake composed of one batter that bakes up into three layers by itself! The top layer is a spongey angel food-like cake, with a soft, velvety pudding in the centre and a solid custard in the bottom. It’s incredibly light, but it’s also quite decadent! So, basically, the ideal spring or summer dessert.

Ingredients

  • 4 eggs, separated at room temperature
  • 2 teaspoons sugar + 1/2 cup
  • 1 teaspoon of water
  • 2 teaspoon vanilla extract
  • 1 stick melted butter
  • flour, 3/4 cup
  • 2 cups milk, lukewarm

Instructions

  1. Preheat the oven to 325 degrees Fahrenheit. 4 egg whites, whisked until firm peaks form in a medium mixing basin. In a separate large mixing bowl, combine the egg yolks, sugar, water, and vanilla extract. Beat till light and fluffy.
  2. Continue beating for another minute after adding the melted butter. Mix in the flour until it’s completely mixed.
  3. Fold in the egg whites after adding the lukewarm milk.
  4. Butter or oil an 8′′x8′′ baking pan. Pour batter into pan and bake for 60 minutes, or until golden brown on top. Allow 2 hours to cool in the pan. Lastly, dust with powdered sugar.
