When I’m nervous, I do little things.
In the winter, one of my favorite things to make is a large pot of soup that lasts for days. Something warm and filling that adheres to your ribs while remaining healthy. Something with a lot of veggies would be ideal.

But, before we get into this delicious soup recipe, I’d want to talk about the anxiety I’ve been experiencing recently. This summer, I’ve spent a lot of time away from home. I have no idea what I’ve been up to; I’ve been at home one week and gone the next. I returned home this week from visiting Alex at his current away rotation in Chicago, and I was feeling incredibly anxious. No matter how much I did, there was always a cloud of anxiety hanging over me.
As though it were yesterday. I got up early, worked out, went food shopping, recipe tested four items, shot one, and responded to all of my emails. Despite this, I felt unfulfilled. I felt as though I wasn’t doing enough.
As a result, I began cleaning the home. I placed anything that didn’t need to be out of the way, cleaned out the kitchen cabinets, and tossed out miscellaneous items that were laying about. And just like that, I was feeling much better. My anxiousness started to fade. My mind was no longer humming.
This served as a reminder to me of how much I am impacted by my surroundings. And consider how much being in a congested environment may clog your thinking.
In the next weeks, I’m going to make a concerted effort to keep my house as clean and clutter-free as possible. I also advise you to do so. Instead of dumping your jacket upon the sofa the next time you enter into your home, spend the additional 10 seconds to hang it up. Don’t give in to the urge to kick off your shoes and leave them in the corridor! Put the infants in their cribs. Because I’m certain that if you do, you’ll feel better about your space and surroundings, and your mental health will improve as a result!
Instructions for making chicken corn chowder
Although this creamy chicken corn chowder is simple to prepare (you basically simply pour everything into a pot and walk away), there are a few things to keep in mind when creating a batch.
Use a heavy-bottomed saucepan – For this corn chowder dish, if feasible, use a heavy-bottomed pot (like cast iron). Heat will be dispersed more evenly, and the soup will be less prone to burn on the bottom. If you don’t have a heavy-bottomed pot, stir the chowder once or twice while it’s cooking to ensure that nothing sticks to the bottom.
Don’t use cooking wine – For this chicken corn chowder, you’ll want to use real white wine, not cooking wine. Cooking wine has a distinct taste and is usually of poor quality. If you don’t want to consume the rest of the white wine with your chowder, freeze it in ice cube trays for later use.
Don’t salt before tasting – this chowder recipe doesn’t call for salt. This is due to the fact that the chicken stock I used was already salty. If your stock isn’t salted or you like salty soups, taste the chowder after it’s been cooking for a bit and season with salt if necessary.

- 1 tablespoon unsalted butter
- 1 big coarsely chopped onion
- 2 cups sliced carrots, diagonally
- 1 cup chopped celery
- 3 sliced zucchinis
- 3 garlic cloves, minced
- a quarter cup of white wine
- 1 cup quartered cherry tomatoes
- 4 corn ears, cut off the cob
- 6 cups stock (chicken)
- 1/2 gallon whole milk
- 1 quart thick cream
- 1 tablespoon mustard (dijon)
- 1 teaspoon of sugar
- 2 cups chicken shredded
- a lot more corn
- Bits of bacon!

- Cook for another 3 minutes after adding the carrots and celery. Stir in the zucchini, garlic, and white wine, and simmer for another 5 minutes, or until the zucchini is somewhat soft.
- Stir in the cherry tomatoes, corn, chicken stock, milk, cream, dijon, and sugar. Add the shredded chicken and mix well. Once the soup has to a boil, reduce to a low heat and cover entirely.
- Soup should be simmered for 1 hour, stirring periodically. Serve with microgreens and bacon pieces on top!
