Ingredients

  • 3 cups flour (all-purpose)
  • a quarter cup of sugar
  • 2 tablespoons powdered baking soda
  • 1 1/2 teaspoons bicarbonate of soda
  • poppyseeds, 4 1/2 teaspoons
  • confectioner’s sugar (1/2 cup)
  • 1 teaspoon kosher salt
  • 1 stick plus 1 tablespoon softened unsalted butter
  • 1 1/2 quarts of milk
  • 3 eggs
  • 1 tbsp extract de vanille
  • 2 lemons, zest and juice

Instructions

  1. Preheat the oven to 325 degrees Fahrenheit. Combine flour, baking powder, baking soda, and salt in a large mixing basin. Combine butter, milk, eggs, sugar, and vanilla essence in a separate dish. Pour the wet ingredients into the dry ingredients and whisk until everything is well combined. Stir in the poppyseed and one lemon’s juice and zest until everything is well mixed. Fill a big, oiled bundt pan halfway with the batter. Bake for 35 minutes, or until a knife inserted into the cake comes out clean.
  2. Combine the zest and juice of another lemon with 1/2 cup confectioner’s sugar while baking. (This quantity varies depending on how much lemon juice you obtain; if you want a thicker glaze, use more confectioner’s sugar; if you want a thinner glaze, add more water.)
  3. Turn the cake upside down and pour the glaze over it after it has cooled. Warm or chilly is fine!
