Ingredients

  • 1 big peeled and sliced onion
  • 1 1/2 cups sliced celery
  • 1 1/2 cups sliced carrots
  • 1 garlic clove, minced
  • 2 teaspoons seasoning (Italian)
  • 1 teaspoon kosher salt
  • 1 tablespoon coarsely chopped fresh thyme
  • 1 tablespoon finely chopped rosemary
  • 2 1/2 cups small bella or shitake mushrooms, diced
  • 1 cup wild rice, uncooked (can use wild rice blend, but real wild rice preferred)
  • 4 c. liquid (vegetable or chicken)
  • flour (three tablespoons)
  • 1/2 gallon half-and-half
  • to taste with salt

Instructions

  1. In your Instant Pot, combine chopped onion, celery, carrots, minced garlic, Italian seasoning, salt, thyme, rosemary, mushrooms, wild rice, and stock. Seal the container and set the timer for 35 minutes on high pressure manual mode. Allow steam to escape via the top steam valve.
  2. Remove the cover when the pressure has been released and set the Instant Pot to sauté mode for 10 minutes.
  3. Mix flour and 1/2 cup half-and-half in a small mixing bowl with a fork to produce a thick paste (doing it this way will guarantee no flour bumps end up in your soup!). Add the remaining half-and-half to the soup, which is now simmering. Allow 10 minutes for the soup to thicken before removing from the heat and serving!
