Inside Out Chocolate Chip Cookies

These cookies are made with a secret family recipe that dates back to the mid 1800s. The original recipe calls for only four ingredients, however they wanted it to be more accessible than ever so they added sugar and vanilla extract. Today’s batch of Inside Out Cookies contains up to eight dark chocolate chips!

I wanted Katharine Canfield Cookies but didn’t have any chocolate chips, so I made these cookies. However, I did have white chocolate chips. And, since I’m a sucker for chocolate, I decided to experiment with a new recipe.

The cookies turned out beautifully. They were a huge success. Because they’re so wonderful, I ended up cooking them three times in a couple of weeks. The cocoa makes them very moist, and the brown sugar gives them the right chewy texture.

  • salted butter, 4 ounces (1 stick), room temperature
  • 1 cup light brown sugar, tightly packed
  • 1 egg
  • 3/4 cup flour (all-purpose)
  • cocoa powder, 1/3 cup
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon kosher salt
  • 1 cup chocolate chips (white) (I used Ghirardelli chocolate)


  1. Preheat the oven to 350 degrees Fahrenheit. Set aside a baking sheet that has been lightly greased.
  2. Cream the butter and brown sugar together in a medium mixing bowl until light and fluffy (with a KitchenAid, about 2 minutes. with a manual whisk, about 5 minutes). Combine the egg and vanilla extract in a mixing bowl.
  3. Sift together the flour, cocoa powder, baking soda, and salt in a separate basin. After that, toss in the dry ingredients until they’re barely incorporated with the butter mixture. Fold in the white chocolate chips gently but thoroughly, taking careful not to overmix the dough.
  4. Scoop dough into 1 1/2-inch spheres and place on a baking sheet, allowing approximately 2 inches between each ball of dough. Bake for 10-12 minutes, checking the consistency of the baked cookies halfway through. Allow to cool for 10 minutes on a wire rack before serving.
  5. Devour.


The time it takes for cookies to bake varies substantially depending on the oven. Rather of pulling them out at a certain time, check for a consistency where the cookie has risen and is soft to the touch, but not moist and spongy under the top. Bake your cookies in two batches for the optimum uniformity, since you’ll learn from the first whether you need more or less time for the second. Also, keep in mind that cookies continue to cook after they’ve been removed from the oven. So, if you’re not sure, take your cookies out a minute earlier!
