Ingredients
- room temperature 3/4 cup unsalted butter
- 1 1/2 cups sugar (granulated)
- 1 lemon’s zest (about 1 Tablespoon zest)
- 1 teaspoon lemon essential oil
- 1 teaspoon extract de vanille
- 1 room temperature egg + 1 egg yolk
- 2 cups flour (all-purpose)
- baking powder (1/2 teaspoon)
- 1/2 teaspoon bicarbonate of soda
- a half teaspoon of salt
- 2 tblsp opium poppy seeds
for the frosting with lemon
- 2 c. sugar (powdered)
- 1 lemon’s juice
- 2 tblsp. of milk
- a few drops of vanilla extract
- a sprinkle of salt
Instructions
- Preheat the oven to 350 degrees Fahrenheit and prepare a baking sheet with parchment paper. Remove from the equation.
- Combine the sugar and lemon zest in a small bowl and massage the zest into the sugar with your fingertips until the sugar begins to clump together and smells wonderful. Allow to infuse for 5 minutes.
- In a stand mixer fitted with the paddle attachment, combine the butter and lemon sugar. About 3 minutes after starting on medium speed, gradually increase to high until the butter is light and fluffy and pale in color.
- Scrape down the edges of the bowl with a rubber spatula. Combine the eggs, lemon essence, and vanilla extract in a mixing bowl. Blend until absolutely smooth and mixed.
- Add the flour, baking powder, baking soda, and salt after scraping down the bowl. Stir on low speed until completely blended and no flour streaks remain. Don’t overmix the ingredients. Finally, beat in the poppy seeds until they are uniformly distributed.
- Scoop the dough into round balls with a tiny cookie scoop and place them 2 inches apart on a baking sheet. Bake for 9 to 11 minutes, or until the rims are golden brown and the centers are puffy but still gooey. Remember that the cookies will continue to cook as they cool, so they should be slightly underbaked when you remove them from the oven. Allow for thorough cooling of the cookies.
- Make the lemon frosting while the cookies are cooling. In a mixing basin, whisk together all of the icing ingredients until smooth. If your frosting is overly thick, thin it out with a teaspoon of milk until it reaches the required consistency.
- Drizzle the frosting over the cookies after they’ve cooled. To serve, top with more poppy seeds if preferred. Enjoy!
