Ingredients

  • 3 cups flour (all-purpose)
  • 2 cups sugar (granulated)
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon cinnamon powder
  • a half teaspoon of salt
  • 2 cups ripe bananas, cut
  • 1 cup crushed pineapple, drained
  • 1 cup extra virgin olive oil
  • 2 big beaten eggs
  • 1 1/2 tablespoons extract de vanille
  • 1 cup (4 oz.) coarsely chopped walnuts, plus more for the topping
  • a half cup of raisins

for the cream cheese icing

  • 4 ounces room temperature cream cheese
  • 1/4 cup room temperature butter
  • a half pound of confectioners’ sugar (about 4 1/2 cups sifted) 1 teaspoon extract de vanille

  • 12 ounces white chocolate chips, heated in the microwave in 30 second intervals

  • Preheat the oven to 350°F with racks in the middle and bottom thirds. Butter two 9-inch round cake pans lightly, then dust equally and tap out the excess flour. (If desired, grease the pans, line the bottoms with parchment paper circles, then flour the pans and tap off any excess flour.)
  • In a mixing basin, sift together the flour, sugar, baking soda, cinnamon, and salt. Stir or whisk the bananas, pineapple, oil, eggs, and vanilla in a separate basin until well blended. Use a hand mixer instead of an electric mixer. With a broad spatula, fold together the wet and dry ingredients until smooth. Do not thrash. Combine the walnuts and raisins in a mixing bowl. Distribute equally across the pans.
  • Bake for 30 to 35 minutes, or until the cake springs back when touched in the middle. Allow 10 minutes for the cakes to cool on wire racks. Place the cakes on the racks and invert them (remove the parchment paper now if using). Cool thoroughly before turning right side up.

  • In a large mixing bowl, whisk the cream cheese and butter on high speed until well blended. To achieve a smooth icing, gently beat in the sugar, then the vanilla extract on low speed.
