Homemade Raisin Bran Muffins Recipe

It was 75 degrees and sunny today. I went for a run, read on my roof, and spent the day with my windows open. What a perfect day. However, this is not the case. A tornado decided to pay Ann Arbor a visit. It’s been hailing for almost an hour, there are flash floods all throughout town, and Washtenaw County is now under a Tornado Advisory Warning.

The Department of Public Safety sent out an email to all students advising them to remain indoors. A funnel cloud also damaged a number of homes in the next town over. It’s funny to believe that only 5 hours ago I was soaking up the rays in my swimming suit (hey, 75 degrees is tanning weather). Don’t pass judgment).

As a result, I chose to remain indoors and bake. I’m now holed up in my kitchen, flour all over my arms and still wearing bathing suit bottoms and a large shirt. I’m also baking these gorgeous tiny Not Your Grandma’s Bran Muffins. I suppose it’s still a beautiful day. They’re very moist and soft, yet they’re not at all thick or sweetened with raisins! I’ll definitely be cooking them again in the near future.

(Update: I took them to work, and my boss was so taken with them that he begged me to pay him so I could make him more.) Yeah. That’s how good they are.)

Bran Muffins: How to Make Them

Bran muffins are simple to prepare, but this recipe includes a few additional steps not found in most muffin recipes. You must toast the wheat bran for a few minutes in the oven before adding it to the muffin batter. While the wheat bran is toasting, boil some raisins in a kettle of water until they have absorbed all of the liquid. Blend or process the raisins until smooth in a high-powered blender or food processor.

After that, you may start making the muffin batter. Simply mix the wet and dry ingredients separately in separate dishes before mixing them together. Bran muffin batter is thicker than standard muffin batter, thus it takes longer in the oven. It’s also difficult to determine when the muffins are done baking since the batter is already golden. After they’ve been in the oven for about 20 minutes, I simply pierce the middle of the muffins. They’re ready to be taken out if the center is firm.

Ingredients

  • 2 cup bran from wheat
  • 1/2 cup dark raisins in addition to 1 cup
  • 1/2 cup water + 1 cup
  • 1/2 cup plain low- or non-fat yogurt or 1/2 cup buttermilk
  • a smidgeon of freshly grated orange zest
  • 1/2 cup light brown sugar, packed
  • a half cup of vegetable oil
  • 2 eggs, big
  • flour, 3/4 cup
  • 1 teaspoon powdered baking soda
  • 1 teaspoon bicarbonate of soda
  • a half teaspoon of salt

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Paper liners should be used to line a 12-cup muffin tray.
  2. Spread the wheat bran on a baking sheet and toast for six to eight minutes in the oven, stirring a few times to ensure equal cooking. Allow to cool.
  3. While the bran is toasting, combine 1 cup raisins and 1/2 cup water in a small saucepan. Cook for 10 minutes, or until all of the liquid has been absorbed. In a food processor or blender, puree the raisins until smooth.
  4. Combine the toasted bran, buttermilk or yogurt, and 1 cup water in a large mixing basin, then add the raisin purée, orange zest, and brown sugar. Combine the oil and eggs in a mixing bowl.
  5. Combine the flour, baking powder, baking soda, and salt in a mixing bowl, then sift it into the wet ingredients. Stir in the remaining 1/2 cup raisins once the ingredients have been well blended.
  6. Fill the muffin pans halfway with batter, ensuring sure each one is slightly mounded. Because muffin pans vary in size, bake fewer muffins if your tins are bigger.
  7. Bake for 25 to 30 minutes, or until the core of the muffins feels firm.
