In other news, Michigan is below freezing. I stepped out of the home today and came to a complete halt since I wasn’t prepared. But that doesn’t mean I’m not looking forward to the arrival of sweater weather. I’m ecstatic. I’ve had my eye on a camel-colored coat for a long now, and I’m eager to put it on.
Right now, I’m certainly zoning out on Arthur. It’s the episode in which Buster finds the Big Boss Bar, an irresistible candy bar made of tri-enzomated zorn jelly (lol). Buster’s mother eventually exposes the candy corporation, and Buster now eats only nutritious foods.
So I created chocolate sorbet to respect the cool weather, as well as Arthur and eating healthily (whoops). Not just any chocolate sorbet, though. Chocolate sorbet by David Lebovitz. The high chocolate content creates a very silky texture. It’s just divine.
What exactly is sorbet?
You’re not alone if you’re unsure about the difference between sorbet and ice cream. I didn’t realize the distinction until lately, so don’t feel bad if you don’t. Normally, sorbet is made out of just sugar, fruit, and water (however this chocolate sorbet recipe is an exception since it contains no fruit). Sorbet is naturally vegan and does not have the same creamy texture as ice cream. Ice cream, on the other hand, is a thick, scoopable dessert prepared with milk and/or cream. Both are, however, quite simple to create at home!
This chocolate sorbet recipe has just four stages and takes only 15 minutes to prepare. To create this vegan chocolate sorbet, you’ll need to:
Heat the ingredients on the stove — In a saucepan, combine the water, sugar, cocoa powder, and salt. Bring to a boil, continually stirring. Add the chopped chocolate and stir until melted after the sugar has dissolved and the mixture is smooth. After that, add the vanilla essence and the remaining water.
Blend everything together — Carefully pour the chocolate sorbet base into a blender and process for 15 seconds on high. This will ensure that everything is well blended and that the sorbet base is airy.
Chill, then churn – Let the sorbet base chill fully in the fridge before adding it to your ice cream machine (this will take a few hours). Churn the sorbet base in an ice cream maker after it has been cooled.
- 2 1/4 cup water (555 ml)
- 1 cup sugar (200 g)
- unsweetened Dutch-process cocoa powder, 3/4 cup (75 g)
- 1 teaspoon of salt
- 6 ounces (170 g) coarsely chopped bittersweet or semisweet chocolate
- vanilla extract (1/2 teaspoon)
- 1 1/2 cups (375 ml) water, sugar, cocoa powder, and salt, whisked together in a big pot. Bring the mixture to a boil, whisking constantly. Allow it to boil for 45 seconds while whisking constantly.
- Remove the pan from the heat and whisk in the chocolate until it has completely melted, then add the vanilla extract and the remaining 3/4 cup (180 ml) water. Blend for 15 seconds after transferring the contents to a blender. Chill the mixture well, then freeze it according to the manufacturer’s directions in your ice cream machine. If the mixture has thickened to the point that it cannot be poured into your machine, rapidly whisk it to thin it out.
