I won’t judge you, but if you’re seeking for the same chocolate peppermint taste punch in a gluten-free, vegan, and refined sugar-free cookie, try this simple healthy thin mints recipe!

I believe we can all agree that the greatest girl scout cookie is thin mints. Okay, in my heart, thin mints and Samoas are pretty much tied for first place. It’s not like I’m chomping on tagalongs. No, siree, just give me the chocolate peppermint bite-sized cookies, and I’ll be a happy lady.

This recipe for handmade thin mints is surprisingly simple and fast to prepare!

  1. Make the chocolate peppermint cookies: For our vegan friends, we prepared a chocolate peppermint shortbread using maple syrup, gluten-free flour, and coconut oil. Simply lay out the cookies, cut out circles using a circle cutter, and bake!
  2. Melt the dark chocolate and coconut oil together in the following order: These are low sugar and vegan thanks to the dark chocolate! To give these handmade thin mints an additional shine, add a tablespoon of coconut oil to soften the chocolate slightly.
  3. Dip the cookies in dark chocolate with a fork, scraping off the excess on the bottom and simply transferring to a wire rack or wax paper!
  4. Devour: That’s all there is to it.

Ingredients

  • a quarter cup of coconut oil
  • a quarter cup of maple syrup
  • 1 tbsp. brown sugar (or coconut sugar!)
  • 2 tsp peppermint essential oil
  • a quarter cup of almond milk
  • 1 gluten-free flour cup*
  • a quarter cup of cocoa powder
  • salt (1/4 teaspoon)

for the chocolate dipping sauce

  • 12 oz. chopped dark chocolate
  • 1 tbsp coconut butter

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and prepare a baking sheet with parchment paper. Remove from the equation.
  2. In a mixing basin, whisk together the coconut oil, maple syrup, and coconut sugar until smooth. Peppermint extract should be added now.
  3. Combine the gluten-free flour, cocoa powder, and salt in a separate basin. Combine the dry and wet ingredients in a mixing bowl and stir until well combined.
  4. Turn out the dough onto a floured board and shape into a disc. Roll out the dough to a thickness of approximately 1/16 inch. Although the dough will be thin, it will not tear. Cut out cookies using a tiny round cookie cutter and gently place them on the prepared baking pans.
  5. Bake for 9 minutes, or until completely done. These cookies are similar to chocolate shortbread, therefore they should be crisp! Allow to cool fully before using.
  6. Line a cookie sheet with wax paper when you’re ready to dip the cookies in chocolate. In a double boiler or microwave, melt the dark chocolate and coconut oil in 30 second intervals over medium low heat, stirring after each heating. Repeat until the chocolate has melted and is absolutely smooth.
  7. Dip each cookie in the chocolate with a fork, scraping off any excess chocolate before transferring to wax paper to cool. Repeat with the remaining cookies and place in the freezer to set for 20 minutes. Store in an airtight container at room temperature for up to 2 weeks or in the freezer for up to 3 months! Enjoy!
