We’ve all been there: two hours into a road trip, ravenous. Perhaps it’s the boredom, or perhaps it’s the odd need to eat while sitting peacefully in the passenger seat. You’ll need munchies in any case. Badly.

However, gas station snacks are unhealthy. You don’t want to eat too much junk food. You’re not limited to cheese puffs and chocolate bars just because you’re in the vehicle. No way, ma’am. 

You want items that will make you feel good for 13 minutes, or until the next rest stop sign goes by and reminds you of food again, whichever comes first.

So, in honor of summer road trips, I’ve teamed up with my pals at Blue Diamond to develop a variety of quick, delicious, and nutritious snacks. Let’s get this party started, folks!


The first dish is Rainbow Veggies. They’re not only beautiful, but they also make the most of summer vegetables.

For the vegetables, prepare the following:

1 red bell pepper, chopped 1 bell pepper, yellow 3 carrots (orange) 1 bell pepper, green a couple of celery sticks 3 carrots, purple

All of the vegetables should be cut into sticks or strips, and ROYGBIV should be placed in a tupperware container. Tada!


Next up are No-Bake Blueberry Almond Breakfast Bars, which are one of my favorite snacks. These are incredible, and not just for breakfast. They have a blueberry muffin flavor and are high in healthy fats and slow-release carbohydrates.

I wrapped them in a little piece of parchment to keep them from sticking together and put them in a ziplock bag to make them road trip friendly. That’s it!


So here’s the next one that I’m very excited about: Crunchy Wasabi Soy Snack Mix. By 3 p.m., it reaches that savory/salty mix that I like, and it lasts for about 2 weeks. Score!

For the mixture, combine the following ingredients:

a third cup of soy sauce 4 teaspoons melted butter 1 tblsp sesame seed oil 1 1/2 tablespoons wasabi powder 1 tablespoon ginger, 1/2 teaspoon salt 1 teaspoon garlic powder 5 cups chex rice 2 cups pretzels, unsalted sesame seeds, 3 teaspoons 1 pound sesame seeds 1 cup peas with wasabi 1 cup Blue Diamond Almonds with Wasabi & Soy Sauce (Just a heads up: they are quite addictive!)

Preheat the oven to 250 degrees Fahrenheit. In a small bowl, combine melted soy sauce and sesame oil. Combine the powdered wasabi, salt, ginger, and powdered garlic in a mixing bowl. Combine chex, pretzels, and sesame seeds in a separate bowl. Toss to incorporate with the sauce mixture. Bake for 40-50 minutes, stirring gently after 10 minutes, after spreading evenly on a baking sheet.

Allow time for the sesame sticks, wasabi peas, and almonds to cool fully before adding them.


Finally, we added a few crisp flax seed crackers, plain roasted almonds, and a large ziplock bag full of berries to our basket. The berries were a terrific way to add some fresh fruit into your diet without having sticky hands. Strawberries and blueberries were my choices.
