To make the greatest healthy chocolate chip cookies, follow these guidelines:

Now let’s get down to business. Don’t be intimidated by the fact that these almond butter chocolate chip cookies just need one dish. There are just two minor steps you can take to guarantee flawless cookies every time.

  1. Make sure all of your ingredients are at room temperature: I know I repeat this a lot, and you’re thinking, “We get it, Sofi, room temperature butter,” and you’re rolling your eyes. But it’s crucial in this recipe since it calls for melted coconut oil. If you add a cold egg or maple syrup directly from the fridge to your batter, you’ll get substantial chunks of coconut oil in your healthy chocolate chip cookies. I know this because I’ve done it myself, and let me tell you, it’s really depressing.
  2. Don’t overbake your cookies: Remove them from the oven when the rims are golden brown and the center has puffed up. It’s okay if the middle is still a touch raw. Few things, in my view, are as bad as an overbaked cookie. Simply said, don’t do that.

How to preserve chocolate chip cookies that are good for you:

Because these cookies contain a lot of moisture, you’ll want to keep them in a single sheet to avoid them sticking together. You may keep them for up to 3 days in an airtight container, plastic bag, or covered plate at room temperature or in the fridge. What’s even better? You may store them in the freezer for up to three months.

  • 1/2 teaspoon bicarbonate of soda
  • a half teaspoon of salt
  • 1 1/2 cup chocolate chips (dark)

Instructions

  1. Combine the almond butter, heated coconut oil, maple syrup, egg, and vanilla extract in a large mixing bowl. Whisk for approximately 1 minute, or until the mixture is totally homogeneous. 2. Refrigerate the cookie dough for at least one hour, but up to 24 hours.
