Healthy Blueberry Bran Muffins

These muffins are a healthy option for breakfast. They have all the essential nutrients including fiber, protein and potassium in each serving!

Low fat blueberry bran muffins are a healthy alternative to other baked goods. They are made with fresh blueberries and whole wheat flour, which makes them healthier than most muffins.

Hello there, folks. Today’s post is a bit different from the others. I just returned from Israel, where I spent one of the most incredible weeks of my life. We ate till we were satisfied, and then some. And, as is customary when I meet so many tremendously bright individuals, I start pondering ideas for how to improve my blog— my business. Not only for me, but for all of you as well.

One thing I’ve discovered is that I’ve compartmentalized myself into this “recipe” persona, where I only share (mainly) the baked items that I like. I don’t write about my everyday activities, much less about the inner workings of my life.

I’ve done this for a few reasons: I don’t consider myself an expert on anything related to health, lifestyle, or writing about life in general—after all, I’m a baking blogger, so why should anyone care about me and my personal life?— It’s also rather nerve-wracking to post personal information on the internet.

However, after such a vivid and fascinating week abroad, I’ve realized that, as much as I like baking and writing about desserts, I also have some non-baking themes that I’d want to discuss with you. Here are a few examples:

  • Healthy living advice
  • How I turned my blog into a profitable company
  • My exercise regimen
  • My relationship with food is complicated.
  • More photography tutorials
  • …and a lot more.

I’d want to hear from you as well. What would you ask me about yourself if you had the chance? What do you want me to say to you? What can I do to assist you, what can I give you, or what can I discuss with you? After all, it’s because of you that this site exists. You are the reason for the company’s success.

Instructions on how to make these bran muffins

Toast the wheat bran before adding it to the muffin batter—Toasting the wheat bran before adding it to the batter gives these blueberry bran muffins a wonderful texture and a little nutty flavor. The wheat bran just requires a few minutes in the oven to toast, and you should mix it every few minutes to ensure equal toasting.

Sweeten with pure maple syrup—This recipe calls for genuine maple syrup, not chemically flavored maple syrup. If you don’t have maple syrup on hand, honey or agave nectar might suffice.

Use white whole wheat flour instead of normal whole wheat flour in this bran muffin recipe since regular whole wheat flour would make the muffins too earthy and dark in taste. If white whole wheat flour isn’t available, normal all-purpose flour will suffice.

Organic orange zest—Because you’ll be consuming the orange zest, you’ll want to choose an organic orange. If you can’t find organic vegetables at your local supermarket, wash the orange in warm water before zesting it to remove any pesticide residue.

The best way to freeze muffins

These blueberry bran muffins are perfect for a quick and substantial breakfast throughout the week. Allow these bran muffins to cool to room temperature before freezing in a freezer-safe container. When you’re ready to eat, defrost one by heating it in the microwave or leaving it out on the counter overnight.

Next week, I’ll be releasing my first Lifestyle post, and I’m quite happy to share it with you. Until then, let me know what you’d want to read about by leaving a comment below!!

  • 2 cups bran from wheat
  • 1 pound of raisins
  • 1 cup of water
  • 3/4 cup whole wheat flour, white
  • 1 teaspoon powdered baking soda
  • 1 teaspoon bicarbonate of soda
  • a quarter teaspoon of salt
  • 1/2 cup buttermilk (low fat)
  • a smidgeon of freshly grated orange zest
  • 1/4 cup maple syrup, undiluted (can also sub honey or agave)
  • 1/2 cup melted and cooled coconut oil
  • 2 eggs, big
  • 1 cup blueberries (fresh or frozen)

  1. Preheat the oven to 350 degrees Fahrenheit. Paper liners should be used to line a 12-cup muffin tray.
  2. Spread the wheat bran on a baking sheet and toast for six to eight minutes in the oven, stirring a few times to ensure equal cooking. Allow to cool.
  3. While the bran is toasting, combine 1 cup raisins and 1/2 cup water in a small saucepan. Cook for 10 minutes, or until all of the liquid has been absorbed. In a food processor or blender, puree the raisins until smooth.
  4. Combine the toasted bran, whole wheat flour, baking powder, baking soda, and salt in a large mixing basin. Combine the raisin puree, buttermilk orange zest, maple syrup, coconut oil, and eggs in a separate bowl.
  5. Combine the dry and wet ingredients in a single bowl. Stir until everything is well blended, then fold in the blueberries.
  6. Spoon the batter into the muffin pans (I used 1/4 cup scoops), ensuring that the batter is slightly rounded on top.
  7. Bake for 25 to 30 minutes, or until the core of the muffins feels firm. You may freeze them for as long as you like, then take one out the night before to defrost so it’s ready to eat in the morning!
