Back in college, Alex and I stumbled upon this Gordon Ramsay-inspired broccoli soup recipe. We had to taste the soup since he made it sound so amazing. And we were really taken aback.

To this day, I’m perplexed by how creamy and delectable this soup is. Surprisingly, it doesn’t taste like broccoli… It’s a lot starchier and a little sweeter. It’s very remarkable.

YES. I’m not going to claim that biting on a raw broccoli floret is preferable to eating a grilled cheese, but trust me when I say that this Healthy Broccoli Soup is not healthy. Gordon Ramsay, the magical cuisine guru, is credited with finding that when you cook broccoli and purée it with part of the water it boiled in, you get a creamy dreamy soup.

After years of preparing this soup, I’ve tweaked his recipe just a little to make mine even creamier. And since I have no patience, I eat it directly from the blender every time.

Ingredients

  • 5 huge heads of broccoli, cleaned and sliced into large pieces
  • 1/2 cup water from broccoli (I’ll explain later)
  • season with salt and pepper to taste

THAT’S THE END OF IT.

Instructions

  1. In a large pot (like the one you have the most of). Bring water to a boil (it must contain all of your broccoli heads). Season with a generous pinch of salt. When the water is boiling, add the broccoli and cook until it can easily be pierced, about 8 minutes. The broccoli should not be drained!!! 
  2. Remove the broccoli from the saucepan with a slotted spoon and place it in your blender (careful, it’s hot!) Pour in roughly 1/2 cup of the water used to cook the broccoli (it should fill the blender about a quarter of the way). Pulse the broccoli with the water until it begins to break down, then puree the soup on high until it is creamy. Season to taste with salt and pepper.
  3. To serve, ladle soup into bowls. Drizzle with olive oil and/or roasted broccolini and toasted walnuts as a garnish!
