  • 2 lbs. sugar
  • 1 3/4 cup flour (all-purpose)
  • cocoa powder, 3/4 cup
  • 1 1/2 tablespoons powdered baking soda
  • 1 1/2 teaspoons bicarbonate of soda
  • 1 teaspoon espresso powder (instant)
  • 1 teaspoon kosher salt
  • 2 eggs
  • 1 gallon of milk
  • a half cup of vegetable oil
  • vanilla extract (two tablespoons)
  • 1 cup of hot water

a frosting recipe:

  • 3 CUP CONDITIONER’S SUCTIONER’S SUCTIONER’
  • cream cheese, 8 oz
  • 1 unsalted butter stick
  • 1 teaspoon vanilla extract

because of the spiderwebs

  • 1 cup candy coating (dark chocolate)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Using cupcake liners, line 18 cupcake molds.
  2. In a large mixing bowl, combine the sugar, flour, cocoa, baking powder, baking soda, espresso powder, and salt. Add the eggs, milk, oil, and vanilla extract; beat for 2 minutes on medium speed with an electric mixer. Pour in the hot water and stir well (batter will be thin). Fill cupcake tins halfway with batter.
  3. Cook for 20–25 minutes, or until a wooden pick inserted in the middle comes out clean. Allow to cool for 10 minutes before transferring to wire racks. Allow to cool fully.
  4. Prepare the icing while the cake is baking. Combine cream cheese, butter, sugar, and vanilla in an electric mixer on medium-high speed until smooth. Once the cupcakes have cooled completely, frost using a big tip piper or a makeshift piping bag made from a thick, quart-sized plastic bag. Fill the bag halfway with icing and snip a hole at one end. Then, using a pastry bag, squeeze the frosting onto the cupcakes.
  5. Finally, in a microwave, heat candy coating in 30-second intervals, stirring carefully in between, just until melted. Fill a piping bag or a plastic zip-lock bag halfway with melted candy coating; snip a very tiny hole in the bag’s end. Wax paper should be used to line a baking pan. Freehand spiderweb patterns are piped. I cooked a couple of extras to consume later. Nom.
  6. The spiderwebs should be placed on top of the frosted cupcakes. Voila!
