I am delighted to announce that my tomato bisque with grilled cheese shooters are the greatest tomato bisque I’ve ever prepared. It’s also quite simple. Onion, shallot, carrot, tomato, and cream were all mentioned. The color is light cream. We do this so that we may conserve some calories for brownies. These shooters are ideal for a large group. They may be prepared ahead of time and reheated just before your guests arrive. Then top with a grilled cheesy triangle and you’re ready to party!

They’re ideal for the holidays, when there are so many foods to choose from that all you want to do is try one taste of each. Plus, I purposefully designed the recipe such that you had extra tomato bisque. For a few seconds, at least. If you don’t like leftovers, you may easily cut the recipe in half. But who am I fooling, leftovers are a hit with everyone.


To prepare tomato bisque, follow these instructions.

Since most of us have been cooking and devouring grilled cheese sandwiches since we were kids, I’m guessing it’s the tomato bisque that gives you the creeps. Making homemade tomato soup is really simple and only takes a few simple ingredients. The following are the fundamental methods for producing tomato bisque (also known as gourmet tomato soup):

Cook the vegetables — In a large saucepan, cook the onion and shallots until they are transparent. Then, add shredded carrots and a generous teaspoon of salt, and simmer for a few minutes longer. Toss in the tomatoes, which have been roughly chopped, and heat until they’ve softened.

Add the cream and bring to a boil — Once the vegetables have softened and boiled down, add the cream to the bisque and bring to a boil. Reduce the heat to low and simmer the tomatoey deliciousness for 30 minutes.

Transfer the tomato bisque to a blender and process until smooth after 30 minutes. If you’re fortunate enough to possess one, you can also use an immersion blender. If you want a perfectly smooth tomato bisque, strain it through a fine mesh screen before serving to eliminate any lumps.

For the bisque de tomates

  • 1 tablespoon extra virgin olive oil
  • 1/2 big white onion, finely chopped
  • 1 diced shallot
  • 4 shredded carrots
  • Tomatoes with Campari, 2 pound
  • 1 quart of light cream
  • season with salt and pepper to taste

For the grilled cheese sandwiches

  • 4 white bread slices
  • 2 tablespoons unsalted butter
  • 4 large slices of your favorite cheese (I used a sharp cheddar)


  1. Cook the onions and shallots in 1 tablespoon olive oil in a large saucepan over medium-low heat until transparent. Cook for a further 3-4 minutes, until the carrots have softened and the onions are golden brown, adding shredded carrots and a touch of salt.
  2. Cook for another 3 minutes after roughly chopping the tomatoes into cubes. Season with salt and pepper and pour in the cream. Reduce to a low heat setting, cover, and cook for 30 minutes.
  3. After 30 minutes, transfer the bisque to an electric mixer and purée until smooth (careful, it’s hot!). To eliminate any lumps, strain the bisque through a fine mesh screen. While you’re grilling the cheese, let it cool somewhat.
  4. Each piece of bread should be brushed with butter on one side. Don’t skimp on the butter; it’ll give the bread a beautiful golden crisp. Place each slice butter side down in a large saucepan over low heat. Cook for 5 minutes, or until each slice is golden brown, after topping with a piece of cheese. Remove the crusts and cut into triangles after assembling two slices together.
  5. Fill 2 ounce shot glasses halfway with bisque, then top with grilled cheese triangles. You’ll have approximately a pint of bisque left over–do anything you want with it!!
