There are moments in life when you want a cake but don’t want to go out and purchase all the ingredients. Or when you don’t trust your baking talents enough to create one from scratch. 

So I prepared you a jazzed-up cake from a store-bought mix to remedy both of those difficulties. Vanilla Cupcake & Cake Mix from Simple Mills, not just any mix. It’s a Grain Free Molasses Ginger Cake with Ginger Frosting, not just any cake.

Despite the fact that I do not have any dietary limitations, I am aware that many of you do. And, after the popularity of my Simple Mills Grain-Free Pumpkin Pop Tarts, I decided to bake a grain-free cake for you!


Whether or not I have dietary restrictions, I like Simple Mills’ whole range of goods because of their dedication to high-quality, whole ingredients. They don’t use any artificial flavors or fillers in their recipes, instead opting for simple ingredients like coconut sugar, flax seeds, and tapioca to make excellent grain-free cakes, muffins, and crackers. As a result, when you bake using their mixes, they taste authentically handmade.

This Molasses Ginger Cake is created using a vanilla cake mix that has been tweaked. With only a few tablespoons of molasses, fresh sliced ginger, and spices, you can make the moistest, fluffiest grain-free spice cake you’ve ever had. I topped it off with Simple Mill’s vanilla frosting, which I spiced up with a couple tablespoons of powdered ginger.


This molasses ginger cake is easy to prepare.

This grain-free cake takes less than 10 minutes to prepare and just half an hour to bake. To create this cake, just combine the boxed cake mix, eggs, oil, water, and molasses in a mixing dish. I also added ground cinnamon and nutmeg, as well as freshly grated ginger (feel free to add another tablespoon of ginger if you want this grain-free cake to have even more flavor!).

Pour the mixture into three 6-inch cake pans or two 8-inch cake tins to form a layer cake. (It doesn’t matter which method you choose; the cooking time will be the same.) Stick a knife into the center of the cake to check if it comes out clean to determine if it’s done. Alternatively, gently push your thumb into the center of the cake; if it springs back fast, the cake is done!


What is the best way to ice a layer cake?

Although frosting a layer cake seems to be a difficult task, it is really rather simple! You must wait until the cake layers have fully cooled before applying frosting to the bottom layer. Spread out the icing and continue layering the cake, ensuring that each grain-free cake layer has an equal quantity of frosting.

When you get to the last layer, ice the top of the cake with a little less frosting. Then, using the leftover frosting, spread it around the cake’s edges. On my molasses ginger cake, I just frosted one layer and then evened everything out using the flat side of a spatula. The crumbs will still show up in the icing, but it makes for a lovely rustic cake!

If you’re having trouble icing your cake or want to add extra to the edges, refrigerate the tiered cake for 30 minutes before applying the last layer of frosting. This will assist the frosting set and prevent crumbs from getting into the thick, final coat of icing.


This molasses ginger cake kills three birds with one stone: it’s gluten-free, it can be prepared by anybody from a skilled baker to someone with no experience in the kitchen, and it tastes amazing.

to make the cake:

  • Simple Mills Vanilla Cupcake & Cake Mix
  • 3 big room-temperature eggs
  • a third cup of vegetable oil
  • 1/3 cup liquid
  • 3 tablespoons molasses (dark)
  • 1 tablespoon cinnamon powder
  • 1/4 teaspoon nutmeg powder
  • 2 tbsp. freshly grated ginger (or 3 tbsp. if you want it to be very spicy!)
  • 1 tbsp extract de vanille

a frosting recipe:

  • 2 packets Vanilla Frosting from Simple Mills
  • 1 tablespoon ginger powder


Preheat the oven to 350 degrees Fahrenheit. Set aside three 6-inch or two 8-inch cake pans that have been greased and lined with parchment paper. Whisk together all of the cake ingredients in a large mixing basin. Fill prepared pans with batter and bake for 30-35 minutes, or until a knife inserted in the middle comes out clean. Allow 10 minutes for the cake to cool before flipping onto a cooling rack to cool entirely. Bring the frosting to room temperature in the meanwhile. In a separate bowl, combine the ground ginger and the soy sauce. Completely frost the cake after it has cooled. Top with crystalized ginger bits if desired!
