Grain Free Peppermint Chocolate Donuts

It’s the season for donuts and these ones are made without any grains. They’re vegan, gluten-free, dairy free and they taste amazing! Each donut is customized with a different flavor of peppermint extract to create an unforgettable experience.

The “dinner at the zoo donuts” are a delicious dessert that you can make for your family. The recipe is very simple and easy to follow.

As you may be aware, I am not gluten-free. In fact, I’d say I’m gluten-intolerant to a fault. As in, I feel horrible when I don’t have flour, bread, or pasta. 

However, there’s nothing like the actual thing.

So I’m really particular when it comes to baking using gluten- and grain-free products. For example, just because something is gluten-free doesn’t mean it has to be bland… right?!

Simple Mills is a good example. My closest buddy Ambitious Kitchen originally introduced me to these folks when we baked using a couple of their mixes for a post she did a few years back. Simple Mills is a baking firm that makes gluten-free, grain-free, soy-free, paleo-friendly baking mixes, according to my research.

I was a skeptic of gluten-free foods and didn’t know what to make of it. But it was true love at first taste; I was instantly enamored with everything Simple Mills produces. Their almond flour crackers have become a go-to for cheese boards, and their artisan bread and pizza dough mixes produce wonderful pizza crusts. Their muffin and cake mixes are also adaptable and tasty. Everything tastes wonderfully handmade, and it’s all created using ingredients you can recognize.

So, today, I’m sharing a gluten-free, grain-free Peppermint Chocolate Donut with dark chocolate ganache and crushed peppermint candies. I used Simple Mill’s Chocolate Muffin & Cake Mix to make these.

These donuts are exactly as tasty as they sound, and I love that they can be enjoyed by both gluten-free and gluten-intolerant people. This year, they’ll undoubtedly appear on at least a handful of my Christmas brunch spreads.

Ingredients

For the doughnuts, follow these instructions:

  • 1 box Chocolate Muffin & Cake Mix from Simple Mills
  • cocoa powder (1/2 cup)
  • 3 big room-temperature eggs
  • 1 cup of water
  • a quarter cup of vegetable oil
  • 2 tsp peppermint essential oil

To make the peppermint chocolate ganache, combine the following ingredients in a mixing bowl.

  • Chop 8 ounces bittersweet chocolate
  • coconut oil, 3–4 teaspoons
  • 1 tsp peppermint essential oil
  • 1/4 cup crushed peppermint candies

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Using nonstick cooking spray, generously coat a large doughnut baking pan. Remove from the equation.
  2. Combine all ingredients in a large mixing basin and whisk until thoroughly blended. Fill donut molds two-thirds full with the batter.
  3. Allow doughnuts to cool fully on a cooling rack after baking for 15 minutes.
  4. Melt the chocolate and coconut oil in a double boiler to produce the ganache (start with 3 tablespoons of coconut oil, adding the 4th tablespoon if the mixture is too thick). Remove from heat and mix in peppermint extract after it has melted.
  5. Before putting back on the cooling rack to solidify, dip each doughnut into the peppermint chocolate ganache, brushing off any leftover chocolate. Crushed peppermint candies should be sprinkled over the doughnut. Serve!
