We’re as surprised as you are. And, in our view, when you can’t determine whether something is healthy, it is always a good indicator. This vegan blueberry crisp is a must-try now that blueberry season is in full swing!

This blueberry crisp dish is simple, healthful, and delicious. Blueberries are one of my favorite fruits, and they take center stage in this recipe. My siblings and I used to pluck bowls and bowls of fresh blueberries from our backyard blueberry bushes and pop them like candy.

As a result, it’s no surprise that I’m enamored with blueberry pastries. I’ll take blueberry pie, blueberry scones, blueberry jam, and blueberry muffins, please… I’m not sure whether I’d eat blueberries in any form. And this blueberry crisp is quickly becoming a new favorite of mine.

While I like my blueberries, I’d be lying if I claimed I wasn’t the sort of person who takes all of the buttery yummy topping off the crisp and leaves the fruit for the rest of the family, a.k.a. the worst kind of person ever. Please accept my apologies. I mean, I’m sure we can all agree that the greatest thing about crisp isn’t the nutritious fruit (though that part is good too). The greatest element is, without a doubt, the soft, crunchy, sweet crumble, which makes eating blueberries for dessert seem indulgent.

How do you create a vegan and gluten-free blueberry crisp?

Crisps and crumbles are one of the simplest gluten-free and vegan treats to create since the fruit foundation is already gluten-free and vegan! Butter, sugar, flour, and sometimes oats are used to make the crumble topping. With a few easy substitutions–vegan butter or coconut oil in place of dairy butter, and a gluten-free flour mix and old fashioned oats in place of conventional flour–you’ve got yourself a delectable crisp.

We replaced white sugar with unrefined, natural sweeteners like maple syrup and coconut sugar to take our crisp to the next level… To me, this seems like a nutritious breakfast.

Ingredients

because of the blueberries

  • 7–8 cups fresh or frozen blueberries
  • maple syrup (three tablespoons)
  • a quarter-cup of lemon juice
  • cornstarch (2 tblsp.)

to make the crumble

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and coat a 9 x 13 baking pan with cooking spray. In the preheated pan, combine the blueberries, maple syrup, lemon juice, and corn starch, stirring everything together with a big spoon directly in the pan. Yes, it’s that simple! Assemble the blueberries, making sure they’re equally coated and well combined. Remove from the equation.
  2. Combine the rolled oats, almond flour, gluten-free flour, coconut sugar, almonds, and salt in a large mixing basin. Combine all ingredients in a mixing bowl. Add the vegan butter or coconut oil to the dry ingredients and stir until everything is mixed and the mixture forms clumps.
  3. Toss the blueberries with the crumble topping and serve. Bake for 45 minutes, or until the blueberries have popped and the topping is golden brown.
  4. Allow time for the food to cool before eating. Serve with a dollop of nondairy ice cream. Take pleasure in it.
