Gluten Free Tahini Oatmeal Chocolate Chunk Cookies

Gluten Free Tahini Oatmeal Chocolate Chunk Cookies are a healthy, vegan and gluten-free oatmeal chocolate chip cookie recipe. The cookies are made with tahini, oats, maple syrup, coconut oil, cocoa powder, vanilla extract and salt.

These gluten-free tahini oatmeal chocolate chunk cookies (say that 10 times fast) have just made Monday a whole lot better. Plus, they’re vegan.

Although these cookies are vegan, gluten-free, and sugar-free, they don’t taste like it. 

Listen, I believe that cookies are an important element of a balanced diet. Everything should be done in moderation.

These cookies aren’t like oat bricks at all. In fact, they don’t even have a nutritious flavor to them.

Sofi and I cooked them three times in a week and haven’t grown tired of them yet.

When I say this is one of the finest cookies I’ve ever had, I’m not exaggerating. I’ve also consumed my fair share of cookies. They’re sweetened with maple syrup and dates, so they’re just sweet enough to keep things interesting, but salty enough to keep things interesting.

The flavors of vanilla, cinnamon, and maple, along with the sesame-y undertones of tahini, create a nuanced taste that I could eat every day. Add some dark chocolate chunks and I’m sold.

Ingredients

  • 1 tbsp. tahini
  • a third cup of maple syrup
  • 1 teaspoon extract de vanille
  • a half teaspoon of cinnamon
  • a half teaspoon of salt
  • 1 cup oats, old fashioned
  • a third cup of almond flour
  • 4 oz. chopped dark chocolate
  • 3 chopped dates

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and prepare a baking sheet with parchment paper.
  2. Blend the tahini, maple syrup, and vanilla extract in a large mixing basin and stir to combine.
  3. Combine the oats, almond flour, salt, cinnamon, dates, and chocolate in a mixing bowl until well combined. It’s possible that the batter is still a touch runny. Don’t worry, it will thicken up while it sits. However, if your batter is too runny, add another tablespoon of almond flour. If it’s too thick, a tablespoon of tahini may be added. Allow 10 minutes for the batter to thicken.
  4. Scoop the batter onto the prepared baking sheet using a cookie scoop. With your hand, gently flatten the cookies. Bake for 10-12 minutes, or until golden brown around the edges. The cookies’ middles should still be rather raw (they’re vegan!). Do not overbake; you want the centre to be chewy and gooey.
