Gluten Free/Dairy Free Brownie Ice Cream Sandwich Cookies

Do you trust me when I tell you that these Brownie Ice Cream Sandwich Cookies are both gluten and dairy free? Because I can’t believe I’m saying this. But I promise it’s true!

When two of our friends got engaged, Alex and I volunteered to throw a sweet little dinner at our house. Only one of the happy lovebirds is gluten-free, while another of our guests is gluten-free and dairy-free. I understand. So depressing.

But! With no alternative flours, root powders, or flaxseed meal, I was determined to construct a dessert that would please everyone. So, indeed, these Brownie Ice Cream Sandwich Cookies are created entirely from cupboard goods.

And the brownie cookies, oh my god. They’re fantastic. It tastes just like a brownie, with a gooey, fudgy inside and a crackly crust on the exterior. I’m still surprised they just contain four ingredients (actually, six if you consider vanilla extract and salt, but they aren’t genuine).

I added Kroger’s Simple Truth Chocolate “Almond Dessert,” which is essentially vegan chocolate ice cream, to take them to the next level. It was smooth and creamy, tasting more like a light ice cream than almond milk ice cream.

To be honest, I’m a huge Kroger lover. They compete on pricing with other major grocery shops, but their product variety and quality regularly outperform the competition. It was the same with this vegan ice cream. Take a look at the texture, for example.

Ingredients

because of the cookies

  • 3 CUP CONDITIONER’S SUCTIONER’S SUCTIONER’
  • 1 cup cocoa powder (unsweetened) minus 2 teaspoons
  • 1 teaspoon kosher salt
  • 4 big room-temperature egg whites
  • 1 teaspoon extract de vanille
  • chocolate chips (1 cup)

for the remainder!

  • 1 pint vegan chocolate ice cream from Simple Truth
  • 3/4 cup chopped dark chocolate
  • 1/4 cup walnuts, chopped

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Grease (yes, grease!) a silpat or parchment-lined baking sheet. You’ll need a little bit more since these biscuits cling quickly).
  2. Combine the confectioner’s sugar, cocoa powder, and salt in a mixing bowl. In a separate bowl, whisk together the egg whites and vanilla extract until thoroughly blended. The batter should have the consistency of thick brownie batter. Add the chocolate chips and mix well.
  3. Scoop the batter onto the baking sheet with a 2 oz scoop, 112 inches apart. Bake for 9-10 minutes, or until golden brown. Allow 10 minutes for cooling before transferring to wire rack to cool fully. This recipe makes around 12 cookies.
  4. To create the ice cream sandwich cookies, cut the pint of ice cream into 6 equal disks using a sharp serrated knife. Remove the wrapping after cutting your ice cream disks; this will help keep the ice cream intact and prevent it from melting!
  5. Ice cream disks are sandwiched between two cookies. Continue with the other ingredients, then store in the freezer for 20 minutes.
  6. After 20 minutes, melt the dark chocolate in a double boiler over low heat. Remove the ice cream sandwiches from the fridge after the chocolate has melted and dip them into the melted chocolate.
  7. Sprinkle with walnuts and set on a cooling rack to drain off any leftover chocolate. After you’ve completed, put it back in the freezer for around 10 minutes to solidify. Ice cream sandwiches may be frozen for up to three weeks if stored in a plastic container with a cover.
