If we’re eating a Fall taste, it’ll be pumpkin, apple, cinnamon, or ginger. We’re cramming as many of these addictive Oatmeal Molasses Cookies into our tummies as we can today. These ginger oatmeal cookies with just a touch of molasses are delightfully spiced, crispy on the exterior and gooey in the centre.


This cookie recipe has been passed down through my family for generations. In fact, they’re labeled “Uncle Pete’s Favorite Cookies” in my recipe box, but these oatmeal molasses cookies are a favorite of many more than Uncle Pete.

These have a zingy amount of spice, and you may believe you’re getting a gingersnap when you take the first sugar-coated, crunchy mouthful. But don’t be fooled–this isn’t a gingersnap. You get a mouthful of sticky oatmeal molasses center with your second bite. Then eat the remainder of the cookie like Cookie Monster and go on to your second. That’s how my whole family consumes these ginger oatmeal cookies, at least.

Since of the warm spiced scent they emit while they bake, and because they are one of the simplest cookies to present, they are one of my favorite cookies to prepare over the holidays. These bad guys can take a beating from shaken crates and cross-country shipments. It takes weeks for them to get stale (though I doubt you’ll have any for that long). Not to mention how simple they are to create! There are no costly mixers, no chilling period, and no rolling out of the dough.

These cookies are simple to prepare, but I’ve been making them for years and have found out all the small secrets to achieve consistently great cookies.

  1. Sift the dry ingredients: I am the laziest baker in the world, and I hardly never sift my ingredients, so trust me on this. This sifting time is well worth it.
  2. Use components that are at room temperature. Good for you if you haven’t mistakenly scrambled an egg in your cookie dough. But I’ve done it, and it’s a pain. Before adding your egg, make sure the melted crisco has cooled.
  3. Make the cookies as big as possible. A large surface area allows both crispy edges and mushy middle to coexist. It’s either go big or go home.
  4. They should be spaced out. Because these cookies spread, be sure to leave enough space around each one to prevent them from becoming one huge cookie. Even so, that wouldn’t be the worst scenario.
  5. Do not overbake: These cookies will still taste nice if they are crispy all the way through, but the gooey center is the greatest part.

  • 1 1/2 cups flour (all-purpose)
  • 1 cup granulated sugar + more sugar to coat the cookies
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon of ginger powder
  • 1 teaspoon garlic cloves
  • salt (1/4 teaspoon)
  • 1/2 cup melted crisco
  • 1 egg
  • molasses, 1/4 cup
  • 3/4 cup oats, old fashioned


  1. Preheat the oven to 375°F and place parchment paper on a cookie sheet. Remove from the equation.
  2. Sift together the flour, granulated sugar, baking soda, ginger, cloves, and salt in a large mixing basin. In the middle of the dry ingredients, make a well and pour in the melted and cooled crisco and egg. Stir everything together well. The dough is going to be crumbly. You’re doing everything correctly.
  3. Stir in the molasses and oats until everything is well blended.
  4. Make tennis ball-sized dough balls using a big cookie scoop and space them 3 inches apart on the prepared baking sheet.
  5. It’s now time to flatten the cookies out. Fill one small bowl with water and the other with granulated sugar. Dip the bottom of a flat-bottomed glass into the water and then into the sugar. To flatten out the dough ball, press the sugar-coated bottom firmly into it, leaving a thick sugar coating on top. The cookies will have their trademark crunch as a result of this.
  6. Carry on with the remainder of the cookies in the same manner. Bake at 375°F for 11 minutes, or until the rims are golden brown and the centers have risen up but are still uncooked in the centre.
  7. Allow 5 minutes for cookies to cool before moving to a cooling rack. Enjoy!
