Ingredients

  • a quarter cup of peanut butter
  • butter (six tablespoons)
  • 1 and a half cups powdered sugar
  • a quarter teaspoon of salt
  • vanilla extract (two tablespoons)
  • semi-sweet chocolate (20 oz) (we used 5 4 ounce Ghiradelli bars)
  • 2 tsp. coconut oil

Instructions

  1. Set aside a 9-inch tart pan that has been lightly greased.
  2. Melt the peanut butter and butter together in a medium sauce pan. Combine the powdered sugar, vanilla, and salt in a mixing bowl. Stir until there are no more powdered sugar streaks. It will be a thick filling. Allow to cool somewhat before melting the chocolate.
  3. Make tiny, even pieces out of your chocolate bars. In a medium saucepan, heat a few inches of water to a simmer to create a double boiler. Set the chocolate in the double boiler and place a heat-safe bowl over the pot. Stir the chocolate with a rubber spatula until it is completely melted and smooth. Remove the double boiler from the heat and stir in the coconut oil. Mix until the coconut oil has melted and the chocolate is beautiful and smooth.
  4. Fill the tart pan with a little less than half of the chocolate. To freeze, place in the freezer for 10 minutes.
  5. Pat the peanut butter filling into a smooth, uniform layer over the bottom chocolate layer using an oiled rubber spatula or your hands. Because the chocolate will settle on top, it’s critical that this be smooth.
  6. Pour the remaining chocolate over the peanut butter center and spread it evenly over the peanut butter and down the edges of the tart pan using an offset spatula or spoon.
  7. Place in the freezer for 10 minutes to firm up. After the chocolate has hardened, cut into your enormous Reese’s with a sharp knife.
