I know it’s just vanilla with sprinkles in it (which doesn’t actually contribute anything except maybe a little additional sugar), but it’s so much more interesting than plain vanilla. I’m sure you’ve noticed, but I *love* cooking various cinnamon roll variations. Blueberry cinnamon rolls, gingerbread cinnamon rolls, and chocolate cinnamon rolls, to name a few… I mean, what could be better than a buttery, puffy dough filled with a delectable filling? I don’t believe so.

Funfetti and cinnamon buns, in my opinion, have a comparable vitality. They’re decadent, exceptional, and joyful all at the same time. So why not combine the two to make the ultimate birthday breakfast? Sprinkles abound in these festive funfetti sweet rolls, which are filled with a buttery birthday cake crumb. Finish them off with a delicious cream cheese frosting and extra sprinkles, and you’ve got yourself a nice morning ahead of you.

to make the dough

  • 12 cup all-purpose flour 4 12 cup all-purpose flour
  • a third cup of sugar
  • Rapid Yeast, 1 packet (2 1/4 tsp.)
  • 1 teaspoon kosher salt
  • 12 quarts milk
  • butter (six tablespoons)
  • 1 room temperature egg

in order to make the funfetti filling

  • 1/3 cup sugar, granulated
  • a quarter cup of light brown sugar
  • flour, 3/4 cup
  • baking powder (1/2 teaspoon)
  • a half teaspoon of salt
  • 2 tblsp sprinkles (rainbow)
  • 14 cup melted butter or vegetable oil
  • vanilla extract (two tablespoons)

in order to make the cream cheese frosting

  • 3 oz. room temperature cream cheese
  • 12 cup room temperature unsalted butter
  • a third of a cup of powdered sugar
  • 1 teaspoon extract de vanille
  • 1 teaspoon of salt


  1. Combine 2 cups flour, yeast, salt, and sugar in a large mixing basin. To blend, stir everything together.
  2. Microwave the milk and butter in a microwave-safe bowl for 30 seconds, or until warm and the butter has almost melted. Warm, but not hot, is the ideal temperature for the combination. If it’s too hot, wait until it cools before adding it to the yeast to avoid killing it. Toss the flour mixture with the heated milk and butter. Toss in the egg.
  3. Beat on low speed for 2 minutes, then gradually increase to high speed until entirely blended. Scrape down the sides of the basin and add another 12 cups of flour, mixing until smooth. A little at a time, add the remaining cup of flour until the dough begins to pull away from the sides of the basin and form a ball.
  4. Knead the dough for approximately 10 minutes on a well-floured surface, or until it is smooth and you can stretch a piece of dough between your fingers without it breaking. This indicates that the gluten has grown, and your dough will be soft and pillowy.
  5. Cover and place the dough in an oiled basin. Allow 1 hour for the dough to rise in a warm area, or until it has doubled in size.
  6. Make the funfetti crumb while the dough rises. Preheat the oven to 300 degrees Fahrenheit and prepare a baking sheet with parchment paper.
  7. Brown sugar, white sugar, flour, baking powder, salt, and sprinkles should all be mixed together. Mix thoroughly. Mix in the oil and vanilla until the mixture clumps together and resembles wet sand.
  8. Spread out onto your prepared baking sheet in an equal layer. Preheat oven to 350°F and bake for 15 minutes, or until golden brown. Remove the pan from the oven and let aside to cool fully while your dough rises.
  9. On a well-floured surface, lay out the dough into a long rectangle approximately 18 x 12 inches after it has risen. Spread 2 Tablespoons softened butter all the way to the dough’s edge, spreading evenly using an offset spatula or the back of a spoon. Gently press the cooled funfetti crumbs into an equal layer on top of the butter.
  10. Roll the dough away from you into a tight roll, squeezing the bottom edge together to seal it.
  11. Cut the dough into 12 even rolls with floss or a very sharp knife. In a 9 x 13 pan lined with parchment paper, place the rolls. Allow to rise for another hour, covered loosely with a dish towel, until doubled in size and puffed out.
  12. Preheat the oven to 350°F and bake the rolls for 30 minutes, or until golden brown and no longer doughy. Allow time for cooling.
  13. Make the cream cheese icing while the rolls are cooling. Combine the cream cheese, butter, powdered sugar, salt, and vanilla extract in a stand mixer fitted with the whisk attachment. Begin with a medium speed and gradually increase to high until the mixture is light and fluffy. Using a spatula, evenly spread the icing over the 12 rolls. Warm up and enjoy!
