I’ve had a love affair with zucchini since I was a little child. And I’m not exactly sure why… It’s something I’ve always adored. Zucchini may be prepared in a variety of ways, including:

Zucchini bread is, without a doubt, my favorite method to cook zucchini. It’s more subtle than banana bread, and much superior in my view. It’s soft, pillowy, and moist, and you don’t need nearly as much oil or butter to make it taste good.

One of my favorite aspects of this chocolate zucchini bread is how simple it is to prepare. The batter is ready in less than 10 minutes. Put it in the oven for 45 minutes, and you’ll be enjoying an impossible-to-believe fudgy, luscious chocolate bread that you’d never guess included veggies.

I used an All-Clad 1 pound loaf pan to make this bread, which is the ideal size for a complete serving of fast bread. It’s part of an All-Clad 5-piece bakeware set that includes a cooling rack, an 8-inch pan, and a 9-inch pan. The complete set has a nonstick coating with ceramic reinforcement, which makes releasing baked items a breeze. I’ve cooked in both the 8-inch square pan and this loaf pan many times, and neither has to be sprayed with baking spray or lined with parchment paper. Ingredients

  • 12 cup shredded and pressed zucchini
  • a quarter-cup of greek yogurt
  • 14 cup oil (vegetable)
  • a half cup of brown sugar
  • vanilla extract (two tablespoons)
  • 2 room temperature eggs
  • a third of a cup of all-purpose flour
  • a third of a cup of cocoa powder
  • 1 teaspoon bicarbonate of soda
  • a quarter teaspoon of baking powder
  • a quarter teaspoon of salt
  • 1 pound semisweet chocolate chips (distributed)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. 
  2. Finely shred the zucchini over a paper towel using a cheese grater. Wrap the zucchini in a paper towel and massage it to let some of the moisture out. Don’t dry it fully, but push hard on it to remove any extra moisture. To measure out 12 packed cups of zucchini, firmly push the zucchini into a measuring cup. Repeat the procedure if you need to grate additional zucchini.
  3. Combine the greek yogurt, oil, and brown sugar in a large mixing dish. To mix the ingredients, stir them together using a whisk. Whisk in the vanilla extract and eggs one at a time, mixing well after each addition. Set aside after adding the zucchini.
  4. Combine the flour, cocoa powder, baking soda, baking powder, and salt in a separate basin. In a large mixing bowl, blend the wet and dry ingredients until no lumps of flour remain. Fold in 2/3 cup chocolate chips, reserving the remaining third for the bread’s top.
  5. Fill your AllClad nonstick loaf pan halfway with batter and top with the remaining chocolate chips. Bake for 45 minutes, or until a knife inserted in the center comes out clean.
