Ingredients

  • room temperature 1/2 cup unsalted butter
  • 1 pound of white sugar
  • 1 room temperature egg
  • 1 1/2 teaspoon extract of vanilla
  • a quarter teaspoon of almond extract
  • a half teaspoon of salt
  • 1 3/4 cup flour (all-purpose)

icing made with cream cheese

  • 4 oz. softened cream cheese
  • 1/2 cup softened unsalted butter
  • a third of a cup of powdered sugar
  • a half teaspoon of salt
  • vanilla extract (two tablespoons)
  • milk (about 2–3 teaspoons)

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Set aside an 8 × 8 baking tray lined with parchment paper. Combine the butter and sugar in a stand mixer fitted with the paddle attachment and beat until barely incorporated. Beat in the egg, vanilla, and almond extract until well combined.
  2. Scrape down the sides of the bowl and beat for 1 minute with the salt and flour. Spread the cookie dough all the way to the edges and level out the top in your prepared pan. Don’t worry if it’s not completely smooth since it’ll be smothered with icing soon enough! Preheat the oven to 350°F and bake the bars for 20 to 30 minutes. Remove them from the oven when the rims are golden brown but the middle is still mushy.

  1. In a stand mixer, cream together the room temperature butter and cream cheese. 3 minutes after adding the powdered sugar, milk, vanilla extract, and salt, beat until light and fluffy.
  2. Once the cookie bars have cooled, apply the frosting in a uniform layer over them using an offset spatula. Cut into 16 squares, top with your favorite sprinkles, and enjoy!
