Fresh Watermelon Popsicles

The adventurous and creative combinations of a watermelon is what sets it apart from other types of fruit. From the shape to its unique taste, this melon has been utilized for centuries in both sweet and savory dishes that are now enjoyed by people across the globe.

These “creamy watermelon popsicles” are the perfect summer treat. They’re easy to make and require only a few ingredients. They’re also incredibly refreshing on a hot day.

My grandpa used to tell my sister and me that if we ate watermelon seeds, they would sprout inside our stomachs and give us watermelon bellies.

So, I didn’t believe him, but at the same time, no matter how hard we tried, he refused to eat watermelon. This made me a little uneasy. Was he, just maybe, correct? 


Despite my apprehension at the prospect of watermelons growing in my stomach, I ate them nevertheless. Because I adored watermelon and thought it was well worth the risk.

Fresh Watermelon Popsicles is a stupidly simple watermelon dish that I’m presenting today. Dark chocolate is poured over them, then sea salt, flakes and rose petals that have been dried are sprinkled on top. Classy, to say the least.


I prepared these on Friday and found myself slipping into the freezer for more over the weekend. They were the ideal balance of refreshing and filling. They’re also on a stick, which adds to the enjoyment. Yeee!

  • sliced into triangles a tiny seedless watermelon
  • 1/3 cup chocolate chips (dark)
  • coconut oil, 1–2 tablespoons
  • flaked sea salt
  • dried rose petals


  1. Popsicle sticks are used to pierce watermelon slices. Over a large cookie sheet, set on a wire rack.
  2. Melt the chocolate and coconut oil in a double boiler over low heat. Drizzle chocolate over the watermelon with a spoon.
  3. Flaked sea salt and dried rose petals are sprinkled on top. To harden, place in freezer for 20 minutes.
  4. Can be frozen for up to a week if covered!
