Fluffernutter Cookies are a soft and chewy peanut butter cookie with marshmallow creme filling. They’re also called “peanut butter and marshmallow cookies” to distinguish them from the classic chocolate chip and molasses cookies that are often confused for these treats.

These fluffernutter cookies are modeled by my ultimate favorite childhood sandwich, the legendary fluffernutter, and will transport you to all of the finest aspects of elementary school.

My parents used to prepare us sandwiches every day (no crust, of course), and there were just a couple options: turkey with cheddar cheese or, more likely, peanut butter and fluff. Known as the Fluffernutter across the globe. Two pieces of fluffy white bread, slathered with peanut butter and topped with a large helping of marshmallow fluff. Alternatively, if you’re my brother, simply fluff. My parents did, in fact, allow my brother to eat marshmallow spread between two pieces of white bread for lunch every day of his childhood. That’s probably why we all have such a sweet craving.

What Are Fluffernutter Cookies, and How Do You Make Them?

Fluffernutter cookies combine all of the tastes of the iconic peanut butter and marshmallow fluff sandwich to create a wonderfully addictive delicacy. Is it due to a sugar high? Yeah, yeah, yeah, yeah, yeah, yeah, yeah, yeah, yeah, yeah, yeah, yeah Is it, however, completely delicious? Yes, absolutely. We made our favorite chocolate chip cookie dough and added enormous spoonfuls of peanut butter and marshmallow fluff. These peanut butter and fluff biscuits were created as a result.

To avoid overworking your dough and retain the huge swirls, we suggest scooping out each cookie using a cookie scoop. Place each ball on a baking sheet lined with parchment paper and bake for 12 minutes at 350°F. Allow the cookies to cool before serving with a glass of milk, just as in the old days.

If you eat them for lunch, I won’t tell.

Ingredients

  • 3/4 cup melted unsalted butter
  • 3/4 cup packed brown sugar
  • a quarter cup of white sugar
  • 1 egg yolk and 1 egg
  • vanilla extract (two tablespoons)
  • 2 cups flour (all-purpose)
  • 1/2 teaspoon bicarbonate of soda
  • a half teaspoon of salt
  • a third cup of peanut butter
  • a third of a cup of marshmallow fluff

Instructions

  1. In a stand mixer equipped with the paddle attachment, beat the melted butter and sugars until thoroughly combined, approximately 2 minutes. Mix in the egg, egg yolk, and vanilla extract well.
  2. Combine the flour, baking soda, and salt in a separate basin. Combine the wet and dry ingredients and stir until just combined.
  3. Drop spoonfuls of peanut butter and fluff into the dough, stirring gently once or twice to combine. Within the cookie dough, there should still be pockets of peanut butter and fluff. Don’t overmix the ingredients. Chill the dough for at least 1 hour, but up to 24 hours in the refrigerator.
  4. Preheat the oven to 350°F and line a baking sheet with parchment paper when you’re ready to bake your dough. Drop the dough onto the baking sheet with a cookie scoop, allowing 2 inches between each cookie. Bake for 12 minutes, or until golden brown on the outside but still gooey in the middle. Allow for thorough cooling before eating. Enjoy!
