English Muffins…Call me a regular bread maker…

This is a very simple recipe for English muffins that can be made with ingredients you likely have in your kitchen. If not, some grocery stores carry them and they are relatively cheap to buy if you find yourself needing more than one batch at a time.

The “english muffin machine” is a machine that is used to make english muffins. It makes the process much easier and faster than having to do it by hand.

Several failed efforts at bread making throughout my youth taught me to be wary of any recipe that included yeast. I avoid yeasty baked things because I’m afraid they’ll come out bad, even if they’re the finest (who doesn’t want bread and sugar blended together in perfect harmony?). However, I came across this recipe for english muffins one day and decided to file it away in my recipe book, awaiting the day when I would want to tackle a yeast-related meal. That day had finally arrived. I awoke with the intention of facing the morning with these English muffkies (as my dad calls them). What’s more, you know what? They were not only quick and simple to make, but they also tasted like actual English muffins! It’s on par with Pepperidge Farms or Thomas’. They were light and fluffy, easy to cut in half, and even looked like the genuine thing! I believe I’m ready to take on the world now that I’ve regained my confidence. Ingredients

  • 2 1/4 cup flour for bread
  • a half teaspoon of sugar
  • a quarter teaspoon of salt
  • 1 1/4 tsp. dry active yeast
  • 1 tablespoon vegetable shortening (such as Crisco)
  • 3/4 cup (plus 1/4 cup) buttermilk
  • Cornmeal

Instructions

  1. Combine flour, sugar, salt, and yeast in a large mixing basin. Combine the shortening and 3/4 cup buttermilk in a stand mixer or with a hand mixer. A little at a time, add the remaining 1/4 cup buttermilk until the dough comes together.
  2. Knead dough for 10 minutes by hand or 8 minutes in a stand mixer. If using a stand mixer, knead the dough by hand for the final minute. The dough should have a tacky feel to it, but not be sticky. Place dough in a medium bowl that has been oiled. Toss the dough in the basin to coat it with oil. Allow dough to rise until doubled in size, covered with plastic wrap or a kitchen towel (about 60 to 90 minutes).
  3. Sprinkle cornmeal on a sheet pan lined with parchment paper. Using a knife, cut the dough into 6 equal pieces. Before putting on the baking sheet, form pieces into balls, spritz with oil, and sprinkle with cornmeal on both sides. Allow the muffins to rise for approximately an hour after covering them with plastic wrap.
  4. Preheat an oven to 350°F and a griddle to medium heat. Cook the muffins for 5 minutes on each side on the griddle. Bake the muffins for a further 6 minutes in the oven. On a wire rack, cool the muffins thoroughly. With butter and jam, of course!
