Elote

Elote is a Mexican food dish, made from sliced and fried corn served with mayonnaise, crema Mexicana or sour cream. It’s not exactly the most exotic of dishes but it will make any taco night la-di-da!

These Elote-Style Cauliflower Steaks are char-roasted and served with a creamy chili lime sauce and cacique cheese, a spin on Mexican street corn! This cauliflower recipe is simple to prepare and serves as a delicious side dish.

Recently, I’ve developed a taste for savory foods.

It’s a mix of wanting a break from baking, requiring decent evening meals for Alex and myself, and just preferring savory cooking.

After having some extremely amazing elote at a downtown restaurant, I got the idea for these elote-style cauliflower steaks. Roasted corn is smeared in a creamy chili lime sauce and topped with cacique (Mexican feta) cheese in elote, or Mexican street corn. It’s fantastic.

Whereas 2015 was the Year Of Kale and 2016 was the Year Of Brussels, I predict that 2017 will be the Year Of Cauliflower. Peoples, take note of my statements and declare that you heard it first here. So I’m all for cauliflower in the kitchen.

The flavor of the cauliflower steaks is enhanced by roasting them.

Roasting starchy veggies like broccoli and cauliflower is one of Alex’s favorite things to do. It’s similar to how we prepare our vegetables. It imparts a deep flavor to the vegetables as well as a nice char.

What’s the key of our success? The bottom of the pan should be lined with aluminum foil. It’s a great way to crisp things up without burning them. It’s something we swear by.

We’ve begun to try out new taste combinations, such as grilled broccoli with a lemon vinaigrette. Alex cooks it so good that I’d want him to write a blog post about it around Thanksgiving.

This time, though, I tried an elote-style cauliflower as a test. And it came out priiiiitttttttttttttttttttttt It was so good that I’m going to make it again this week.

Ingredients

Cauliflower recipe

  • 1 huge cauliflower head
  • 2 tblsp. extra virgin olive oil, for brushing
  • a pinch of salt

To make the creamy chili lime sauce, combine all of the ingredients in a mixing bowl.

  • a third of a cup of mayonnaise (I used low-fat)
  • 2 tbsp sour cream (or greek yogurt)
  • 3 tablespoons cacique cheese (crumbled feta may be used), plus extra for topping
  • 1 tablespoon cilantro, coarsely chopped, plus extra for garnish
  • a quarter-cup of lime juice
  • cayenne pepper, 1/8 teaspoon
  • a quarter teaspoon of salt

Instructions

  1. Preheat the oven to 450 degrees Fahrenheit. Aluminum foil should be used to line a baking pan (this is necessary- it makes the cauliflower extra crispy).
  2. Here’s what I mean by cutting cauliflower vertically into two thick steaks: As the stem will only keep the cauliflower together in the centre of the head, only the middle of the cauliflower may be utilized for steaks. So, cut the cauliflower in half across the center, then make a big incision to take off the ends. Those florets may be roasted individually and are just as wonderful.
  3. Brush the cauliflower steaks on both sides with olive oil and a sprinkle of salt. Cook for 20 minutes on the first side, then gently turn the steaks with a spatula and roast for another 10 minutes on the second side.
  4. Make the creamy chili lime sauce as the cauliflower roasts. Combine mayo, sour cream/greek yogurt, cacique, cilantro, lime juice, cayenne, and salt in a small bowl.
  5. Remove the cauliflower steaks from the oven and distribute with the sauce. More cacique cheese and cilantro on top!
