Ingredients

  • 3 cups basil (leaves and delicate stems)
  • a third cup of pine nuts
  • lemon juice, 1 tbsp
  • a half-cup of extra-virgin olive oil
  • a half teaspoon of salt
  • 1/2 cup grated parmesan

Instructions

  1. In a food processor, pulse the basil leaves, pine nuts, lemon juice, olive oil, salt, and parmesan cheese until mixed, approximately 3 minutes. Blend until the required consistency is achieved. If the pesto is too dry, softly sprinkle in extra olive oil.
  2. Refrigerate for up to 3 weeks or freeze for up to 3 months in an airtight container. Enjoy!
