Ingredients

to make the cake:

  • 1 3/4 cup sugar, granulated
  • 3/4 cup cocoa powder (dark)
  • 2 cups gluten-free Bob’s Red Mill Cup for Cup flour
  • 1 1/2 teaspoon soda bicarbonate
  • 2 tablespoons powdered baking soda
  • 1 teaspoon kosher salt
  • a quarter cup of vegetable oil
  • 3 big room-temperature eggs
  • 1 gallon buttermilk
  • 1/2 cup coffee (strongly brewed) at room temperature

for making the chocolate buttercream

  • 1 cup room temperature unsalted butter
  • cocoa powder (1 cup)
  • 4 c. sugar (powdered)
  • vanilla extract (two tablespoons)
  • salt (1/4 teaspoon)
  • 3 tbsp. milk (or cream)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Using parchment paper, grease and line a 9 x 13 pan.
  2. Whisk together sugar, cocoa powder, gluten-free flour, baking soda, baking powder, and salt in a large mixing basin. Whisk together the oil, eggs, and buttermilk in a separate basin.
  3. Whisk together the wet and dry ingredients until no lumps remain. Pour in the brewed coffee and stir until everything is well mixed.
  4. Fill prepared pans halfway with batter and bake for 30 minutes, or until a knife inserted in the middle of the cake comes out clean. Before icing, let the cake cool fully on a wire rack.
  5. In a mixing dish, combine all of the frosting ingredients. To integrate the ingredients, beat softly at first, then quickly for 1 minute. Scrape down the sides of the bowl and continue until the frosting is light and fluffy.
  6. Frost the cake, spreading the frosting evenly over the whole surface and swirling it with the back of a spoon. If desired, top with sprinkles and serve!
