Ingredients

  • melted and chilled 1/2 cup unsalted butter
  • 3/4 cup brown sugar, packed
  • molasses (2 tblsp.)
  • 1 room temperature egg
  • 2 tablespoons extract de vanille

  • 1 cup flour, all-purpose
  • ginger, 2 teaspoons
  • a pinch of cinnamon
  • a half teaspoon of all spice
  • a third teaspoon of cloves
  • a half teaspoon of baking powder

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and prepare an 8-inch square baking sheet with parchment paper.
  2. In a large mixing basin, whisk together the melted butter, brown sugar, and molasses until smooth.
  3. Mix in the egg, vanilla, and fresh ginger (if using) until everything is well combined.
  4. Sift together the flour, ginger, cinnamon, all spice, cloves, baking powder, and salt in a separate basin. To incorporate the dry and wet ingredients, fold them together. Do not over-mix the ingredients.
  5. Pour the batter onto the prepared pan and smooth it out into an equal layer. Bake for 20 to 30 minutes at 350°F, or until the sides are firm but the center is somewhat runny.
  6. Make the cream cheese frosting while the blondies are cooling. Combine the softened butter and cream cheese in a mixing bowl and beat until smooth, about 2 minutes. 2 minutes after adding the powdered sugar, cinnamon, vanilla, and salt, mix until frothy.
  7. When the blondies are cool enough to handle, Spread the cream cheese frosting over top. Leave simple or sprinkle with cinnamon sugar! Cut and serve!
