It’s no secret that I like chimichurri, and in these chimichurri flank steak tacos, it’s the star. Chimichurri is a delicious, herbaceous green sauce popular in Argentinian and Uruguayan cuisine. It’s generally served with grilled meats and is prepared with chopped parsley, oregano, garlic, olive oil, and red wine vinegar. My handmade chimichurri recipe may be found here! How to Quickly Pickle Onions

I’ll be honest with you: I’m a really impatient person. So, if there’s a way around it, you can bet I’ll take it. You can always purchase pickled onions, but you can also make them yourself in a matter of minutes. Simply slice your onion and combine it with 1 cup of water, 1 tablespoon white vinegar, and 1 tablespoon of sugar in a small sauce pan. To soften the onions, bring everything to a boil. Remove from the heat and set aside for 15 minutes, and you’ve got yourself some pickled onions.

Chimichurri Steak Tacos Instructions

These chimichurri beef tacos are a crowd-pleaser and seem to be high-end, but they’re really rather simple to prepare.

Make fast pickled onions: Duh, we just spoke about it! I suggest doing a fast pickle beforehand, so that by the time the steak is done, the onions are lovely and pickled.

Cook the steak – Sear the meat over high heat in a cast iron pan or on a grill. Not only does this give it a wonderful, slightly charred taste, but it also seals in all the fluids. Allow 15 minutes for the steak to rest before slicing and serving it. This allows the liquids to redistribute throughout the meat, resulting in a superior steak bite.

Make the chimichurri sauce – Making homemade chimichurri sauce is a difficult task (joking.) Simply combine all of the ingredients in a blender or food processor and pulse until smooth. It takes less than 5 minutes to prepare and is full of flavor! If you have any leftover chimichurri, keep it refrigerated for up to a week! It’s also delicious with chicken and fish. Warm the tortillas before assembling the tacos. Cut the meat against the grain and divide it amongst the tacos. Avocado slices, jalapeos, cotija cheese, those pickled onions you just made, and chimichurri sauce drizzled over top Continue with the remaining tacos and eat up!

Ingredients

for the pickled red onions in a hurry

  • 1 big chopped red onion
  • 1/2 cup water
  • 1/4 cup white vinegar
  • 1 tbsp sugar (granulated)

in order to make tacos

  • flank steak, 1 1/2 pound
  • 1 sliced avocado
  • cotija cheese, crumbled
  • 2 thinly sliced jalapeos
  • 1 recipe for the best chimichurri sauce I’ve ever had
  • 8 white corn tortillas (or your favorite taco shell!)
  • coriander (optional for garnish)

Instructions

for the pickled red onions in a hurry

  1. Combine the sliced red onions, water, white vinegar, and sugar in a small sauce pan. Bring the mixture to a boil, then remove from the heat. Allow the onions to pickle for at least 15 minutes.

  1. Season both sides of the steak with salt and pepper. Preheat a big cast-iron pan or a grill to high temperature. Coat the pan’s surface with a high-heat oil (avocado works nicely!).
  2. Place the steak in the pan with care and cook for 1 to 2 minutes on each side to get a good, even sear. Sear the steak all the way around the edges to lock in the juices and flavor. Check the internal temperature of your steak using a meat thermometer to see whether it’s done. The steak should be cooked to 135 degrees Fahrenheit for medium rare, 140 degrees Fahrenheit for medium, and 145 degrees Fahrenheit for medium well.
  3. Remove the steak from the heat and let it aside to rest for at least 15 minutes before slicing it into 1/4-inch thick pieces for tacos.
  4. Preheat the oven to broil to brown the tortillas. Toasted tortillas are placed on a big baking sheet and baked for approximately 30 seconds. Remove the tortillas from the oven, turn them over, and continue on the other side.
  5. Take one tortilla and put it flat to start assembling the tacos. Place desired quantity of steak, sliced avocado, crumbled cheese, pickled onions, and jalapeo slices on the tortilla. Chimichurri sauce should be poured over the filling. Carry on with the remaining tacos in the same manner.
  6. Serve with chips and guacamole, as well as a decent margarita.
