Easter Bunny Cupcakes

The best thing about Easter is that it’s a time when people make all sorts of deviant and creative desserts. From bunny-shaped cupcakes to carrot cake with cream cheese frosting, these are the five most inventive vegan recipes for springtime feasts!

The “easter cupcakes” are a traditional American dessert that is most often made with chocolate and usually decorated to look like eggs.

Making these Easter rabbit cupcakes was a lot of fun.

One of my favorite holidays is Easter. It usually entails a delectable breakfast, a plethora of flowers, and, if you’re fortunate, chocolate bunnies. I used to go through my Easter basket looking for chocolate bunnies when I was a kid. Caramel-filled bunnies, giant hollow bunnies, and chocolate lollipop bunnies I didn’t care what it was made of as long as it was chocolate and shaped like a bunny.

I recall eating a caramel-filled chocolate rabbit one year, the chocolate melting all around my tongue. No, eating isn’t the appropriate term. Devouring. Yes. Devouring.

It. Was. Paradise.

But now that I’m an adult, melting chocolate all over my face isn’t funny; it’s embarrassing. It’s also a touch sloppy. As a result, I’ll have to come up with new methods to consume my caramel-filled chocolate bunnies. That’s why, when Ghirardelli asked me to make an Easter dish, I knew I had to use their Milk Chocolate Caramel Bunny as inspiration. Because this girl is a chocolate bunny fanatic.

For your Easter Sunday events, Ghirardelli’s complete Easter collection is ideal. Caramel-filled Easter eggs, hollow bunnies (called Noe after a San Francisco district), and miniature milk chocolate bunnies are also available. For good measure, I topped a couple of these Easter Bunny Cupcakes with the caramel-filled eggs as well.

Is it possible to discuss about this vanilla cupcake as well? I’m not a huge fan of vanilla cupcakes, but I’m in love with this recipe. The cupcake is very moist and fluffy, and it serves as the ideal platform for the caramel bunnies to flourish.

Easter Bunny Cupcakes: How to Decorate

You may decorate your Easter cupcakes in whatever way you like, but I kept mine basic (partly because I wanted the chocolate bunnies to be the stars of the cupcakes, and partly because I just really wanted to eat one). The following are the fundamental procedures for making these gorgeous Easter rabbit cupcakes:

Make a frosting mound – You’ll need about 3 tablespoons of frosting to make a large mound for the bunny to sit on. If you have time, you could add some green food coloring to the buttercream to make the top of the cupcake seem like a grassy hill (this isn’t required!).

Sprinkle on some “grass” – for these Easter cupcakes, I used edible green grass, which you can readily get online. Some edible grass brands, on the other hand, have a bad flavor. If you can’t locate a brand you like, you may get the similar appearance by mixing green food coloring with sweetened shredded coconut. Don’t worry about the coconut overpowering these cupcakes.

Top with a chocolate bunny — In case you didn’t notice, the chocolate bunny on top of these vanilla cupcakes is my personal favorite decoration. Make sure the rabbit is securely embedded in the icing so it doesn’t slip off during transport.

So here’s to Easter bunnies made of chocolate. And maybe getting a smidgeon of melting chocolate on our faces. But it’s just a little bit. Perhaps.

Ingredients

to make the cupcakes

  • 6 tbsp unsalted butter (at room temperature)
  • 3/4 cup sugar, granulated
  • 2 big room-temperature eggs
  • vanilla extract (two tablespoons)
  • 1 1/4 cup flour (all-purpose)
  • 1 1/2 tablespoons powdered baking soda
  • a half teaspoon of salt
  • 1/2 gallon of buttermilk

a frosting recipe:

  • a third of a cup of unsalted butter
  • a third of a cup of powdered sugar
  • 1–2 tablespoons milk (whole)
  • vanilla extract (two tablespoons)
  • 1 teaspoon of salt
  • Green grass that is edible and may be used as a garnish
  • 12 Ghirardelli Milk Chocolate Bunnies with Caramel Filling (Caramel-filled eggs may also be used as a fun topping)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Cupcake liners should be used to line 12 cupcake molds. Remove from the equation.
  2. Cream the butter and sugar in a standing mixer equipped with a paddle attachment until light and fluffy, approximately 2 minutes. One at a time, add the eggs, beating well after each addition. Continue beating until the batter is light yellow in color. Add the vanilla essence and stir to combine.
  3. Combine the flour, baking powder, and salt in a separate basin. Fold in the flour mixture and buttermilk in alternate batches, mixing just until incorporated.
  4. Fill muffin liners halfway with batter. Allow to cool fully before frosting after baking for 15 minutes.
  5. In a standing mixer equipped with a whisk attachment, cream the butter to produce the frosting. Combine the powdered sugar, 1 tablespoon whole milk, vanilla essence, and salt in a large mixing bowl. Whip the frosting for 1-2 minutes, or until it is light and fluffy. Add another tablespoon of whole milk if the frosting is too dry.
  6. Apply 3 tablespoons of frosting to each cupcake and smooth it out with the back of a knife. Then top with Milk Chocolate Caramel-filled Bunnies and edible greenery!
