Ingredients

For the caramel

  • 1/2 cup granulated sugar from Baker’s Corner
  • 3 tablespoons unsalted butter from Countryside Creamery, room temperature
  • Heavy Whipping Cream from Countryside Creamery, 1/4 cup
  • a quarter teaspoon of salt

 

To make the pie

  • 1 Belmont Pie Crust (Deep Dish)
  • one pound (5-7) apples, granny smith
  • a quarter teaspoon of salt
  • 2 tsp Stonemill Cinnamon, ground
  • 12 teaspoon ground nutmeg (Stonemill)
  • 12 tsp Stonemill Ginger Powder
  • 14 cup granulated sugar from Baker’s Corner
  • a quarter-cup of lemon juice
  • vanilla extract (two tablespoons)
  • 3 teaspoons of oil All-Purpose Flour from Baker’s Corner

 

To make the crumbs

  • 12 cup unsalted Countryside Creamery butter, melted
  • 1 cup brown sugar, organically produced by Simply Nature
  • 1 tsp Stonemill Cinnamon, ground
  • a quarter teaspoon of salt
  • 12 CUP ALL-PURPOSE FLOUR (BAKER’S CORNER)

Instructions

  1. Heat the sugar in a heavy-bottomed saucepan over medium-low heat, turning the pan gently every 20 seconds or so, until it’s fully melted. Before gently melting, the sugar will begin to form clumps. Be patient and keep an eye on it to prevent it from burning.
  2. Remove the pan from the heat as soon as it has melted and mix in the butter. The mixture will erupt in a flurry of bubbles. You’re doing everything correctly.
  3. Pour in the heavy cream and season with salt. Stir everything together until it’s completely smooth.
  4. Allow to cool fully before pouring into a small dish or cup.
  5. Blind bake the pie dough while you prepare the filling. To keep the Belmont Deep Dish Pie Crust from bubbling over, line it with parchment paper and fill it with rice or beans. Preheat oven to 350°F and bake for 10 minutes, or until golden brown.
  6. Make your filling while the pie crust is blind baking. Peel the apples and slice them into 14-inch thick slices, then chop them in half to make little pieces rather than giant slices. This will fit better in the pie crust and enable you to put more apples in it.
  7. Stir together the spices, salt, flour, lemon juice, vanilla, and sugar in the filling.
  8. A quarter cup of your homemade caramel should be set aside for pouring over the top of the pie. Stir in the leftover caramel to properly spread it throughout the apple pie filling.
  9. Make the crumb topping next. In a medium mixing bowl, combine all of the crumb topping ingredients and whisk with a fork until a crumbly dough forms.
  10. Remove the rice from the blind cooked pie crust and pour the apple filling into it, packing the apples in firmly with a spatula or your hands, gently mounding them in the centre.
  11. Over the apple filling, sprinkle the crumb topping, patting it down gently to get it into the nooks and crannies of the apples.
  12. Bake for 50 minutes to an hour at 350 degrees F, or until the mixture is bubbling and the topping is golden brown.
  13. Allow it cool before spreading the remaining caramel sauce on top. Serve with whipped cream or vanilla ice cream. Enjoy!
