Sandwich cookies, on the other hand, are my absolute favorite. Especially when dulce de leche is a part of the equation. And trust me when I say that these dulce de leche sandwich cookies, also known as alfajores, are better to all other cookies.

I first tried alfajores in a little Peruvian eatery in New York City. And it was love at first bite, to put it mildly. The buttery, delicate biscuits paired with the rich dulce de leche filling… I mean, I thought I’d died and gone to paradise.

So… what exactly are alfajores?

Alfajores are classic South American sandwich cookies with a dulce de leche core that holds them together. Like any traditional cookie, there are variants based on the location from where the recipe is derived, but they’re all equally tasty. The buttery, soft shortbread biscuits go nicely with the caramelly, creamy dulce de leche. And if you’ve never had one before, you must try it.

How to Make Dulce de Leche (Dulce de Leche)

On the stovetop, I prepare dulce de leche the old fashioned way! It will take roughly 4 hours, but it is completely hands-off and involves almost no effort. Here’s how you’ll go about it:

  1. Make careful you use sweetened condensed milk instead of evaporated milk.
  2. Remove the label from the can of sweetened condensed milk and pour it in a big saucepan.
  3. Fill the kettle halfway up with water. With approximately 2 inches of water over the can of sweetened condensed milk, the water must fully cover it. Switch to a deeper/larger pot if your pot is too small. It is possible for the can to explode if it is not kept submerged in water at all times. Please use caution.
  4. Bring the saucepan to a boil over medium-high heat. Reduce the heat to a low simmer and cook for 4 hours, adding extra water to the pot every 30 minutes using a timer. Because the water will evaporate while it simmers, you’ll need to keep adding water to the pot!
  5. Turn off the heat and drain the water from the saucepan after 4 hours. Using tongs or an oven mitt (be cautious, it’s hot!) 4 hours before opening, transfer the sweetened condensed milk to a drying rack to cool fully. If you open the can while it’s still hot, the dulce de leche will spatter and burn you.
  6. Store unopened for up to 3 months at room temperature. Refrigerate for up to 3 weeks after opening!

Advice on how to make the greatest alfajores

  • Prepare ahead of time: Even while dulce de leche is simple to make, it takes time, and since it keeps for months unopened, I prefer to prepare it on a quiet day so I can whip up a batch of dulce de leche sandwich cookies anytime I want.
  • Use high-quality ingredients: Because this alfajores recipe is so straightforward, each item will shine. To get the greatest results, be sure to use high-quality butter and handmade dulce de leche.
  • Don’t overwork the shortbread dough: If you overwork it, it will become dry and crumbly. To avoid overworking the dough and producing too much gluten, merely mix it until it’s incorporated and only roll it out a few times.

Ingredients

  • 1 can condensed milk, sweetened
  • 34 cup unsalted cultured butter from Vermont Creamery
  • a third of a cup of granulated sugar
  • 3 beaten egg yolks
  • vanilla extract (two tablespoons)
  • 1 cup corn flour
  • a quarter cup of all-purpose flour
  • 1 teaspoon powdered baking soda
  • a quarter teaspoon of salt

Instructions

  1. Remove the label off the sweetened condensed milk container and set it in a saucepan of boiling water on its side. Ensure that the water fully covers the can, with at least an inch (ideally more!) of water remaining above it.
  2. Reduce the heat to low and cook for 4 hours. Make sure the water is always covering the top of the can (you will have to pour in more water about every 30 minutes or so depending on how big your pot is).
  3. Remove the can from the water after 4 hours, wait to cool fully, then open and whisk in the salt. Remove from the equation.

  1. Cream together the butter and sugar until light and creamy. One at a time, beat in the egg yolks until they are well combined. Mix in the vanilla extract well.
  2. Using a rubber spatula, scrape down the bowl. Combine the cornstarch, all-purpose flour, baking powder, and salt in a mixing bowl. Mix until a soft dough forms and no flour streaks remain. Don’t overmix the ingredients.
  3. Remove the dough from the bowl and form two flat oval disks. Refrigerate for one hour, carefully wrapped in plastic wrap.
  4. Preheat the oven to 350°F and prepare two cookie sheets with parchment paper after the dough has cooled. Remove from the equation.
  5. Roll out the dough into a big circe approximately 1/8 inch thick on a well-floured board. Cut out cookies using a tiny round cookie cutter, spacing them approximately an inch apart on the prepared cookie sheets.
  6. Bake for 8 minutes, or until the edges are golden brown and dry to the touch. Allow for thorough cooling of the cookies.
  7. To assemble the cookies, sprinkle 1 teaspoon dulce de leche over the backside of each biscuit. Sandwich a second cookie on top of the first. Continue with the remaining cookies. Enjoy!
