It’s no secret that I’m a huge fan of brownies. I’m always concocting new methods to make my favorite brownie recipes even more delectable. And then there’s these: dulce de leche cheesecake swirled brownies, my most recent and finest creation. How to Make Dulce de Leche (Dulce de Leche)

I prefer to make dulce de leche on the stove top the old fashioned way! It will take roughly 4 hours, but it is completely hands-off and involves almost no effort. Here’s how you’ll go about it:

  1. Make careful you use sweetened condensed milk instead of evaporated milk.
  2. Remove the label from the can of sweetened condensed milk and pour it in a big saucepan.
  3. Fill the kettle halfway up with water. With approximately 2 inches of water over the can of sweetened condensed milk, the water must fully cover it. Switch to a deeper/larger pot if your pot is too small. It is possible for the can to explode if it is not kept submerged in water at all times. Please use caution.
  4. Bring the saucepan to a boil over medium-high heat. Reduce the heat to a low simmer and cook for 4 hours, adding extra water to the pot every 30 minutes using a timer. Because the water will evaporate while it simmers, you’ll need to keep adding water to the pot!
  5. Turn off the heat and drain the water from the saucepan after 4 hours. Using tongs or an oven mitt (be cautious, it’s hot!) 4 hours before opening, transfer the sweetened condensed milk to a drying rack to cool fully. If you open the can while it’s still hot, the dulce de leche will spatter and burn you.
  6. Store unopened for up to 3 months at room temperature. Refrigerate for up to 3 weeks after opening!

How to save time and make these dulce de leche brownies even easier to create

The nicest part about these fancy brownies is that you can save on ingredients and still get delectable dulce de leche brownies. You may use all of these methods or only the ones that make sense for you.

  • Buy dulce de leche in a jar: I like to make dulce de leche in large quantities since it stores well and you can always have some on hand, but you can always buy dulce de leche in a jar at the grocery store. It tastes exactly as good and saves you a lot of time!
  • Make brownies from a mix: My friends, there’s no shame in the brownie mix! In fact, I like Ghiradelli brownie mixes to handmade brownies just as much (if not more–shhhh, don’t tell). If you do decide to use a brownie mix, make sure it’s a high-quality one.
  • Make these ahead of time and store them in the freezer: These dulce de leche cheesecake brownies freeze well! Allow them to cool fully before freezing to avoid the formation of strange ice crystals.

Ingredients

Dulce de Leche (Dulce de Leche)

  • 1 can sweetened condensed milk, 14 ounces (you’ll just need 1/3 cup!)
  • a sprinkle of salt

For the Swirl of Cheesecake

  • 4 oz. softened cream cheese
  • 1 room temperature egg
  • a quarter cup of granulated sugar
  • 1 teaspoon extract de vanille

In honor of the Brownies

  • 1 pound of butter
  • 1 cup sugar (granulated)
  • 1 yolk + 2 eggs
  • 1 teaspoon extract de vanille
  • 4 ounces coarsely chopped bittersweet chocolate
  • 3/4 cup flour (all-purpose)
  • a quarter cup of cocoa powder
  • a half teaspoon of salt

Instructions

  1. Make the dulce de leche first. Remove the label off the sweetened condensed milk container and set it in a saucepan of boiling water on its side. Ensure that the water fully covers the can, with at least an inch (ideally more!) of water remaining above it.
  2. Reduce the heat to low and cook for 4 hours. Make sure the water is always covering the top of the can (you will have to pour in more water about every 30 minutes or so depending on how big your pot is).
  3. Remove the can from the water after 4 hours, wait to cool fully, then open and whisk in the salt. Remove from the equation.
  4. Preheat the oven to 350°F and line a 9 × 9 pan on both sides with parchment paper. Remove from the equation.
  5. First, make the cheesecake layer. All of the cheesecake components should be blended in a stand mixer with with the paddle attachment, which should take around 2 minutes. Don’t beat yourself up too much. Remove from the equation.
  6. Make the brownie layer next. Melt the butter in a microwave-safe bowl. Remove the dish from the microwave and mix in the sugar. Microwave for a further 30 seconds. Stir once more and melt for another 60 seconds. The sugar and butter should gently bubble but not burn. This period of time should enough.
  7. Remove the mixture from the microwave and whisk in the bittersweet chocolate to thoroughly melt it. If the chocolate still isn’t entirely melted, microwave it for another 15 seconds.
  8. Combine the eggs, egg yolk, and vanilla essence in a mixing bowl. Mix in the flour, cocoa powder, and salt until everything is well blended.
  9. Half of the brownie batter should be removed and placed in a separate bowl. To thin down the batter, mix together two teaspoons of water and 1/2 cup of batter. The brownie swirl will be created as a result of this.
  10. Pour the rest of the brownie batter into the prepared pan and smooth it out evenly. Over the brownie layer, pour the cheesecake batter. Drop dollops of the leftover thinned-out brownie batter on top of the cheesecake. 5 Tablespoons dulce de leche (homemade dulce de leche) Make a couple large swirls using a knife. Don’t overswirl the mixture. Large swirls of cheesecake, dulce de leche, and brownie are desired.
  11. Preheat oven to 350°F and bake for 30 minutes, or until a knife inserted in the middle of the brownies comes out largely clean. Allow it cool entirely before refrigerating for an hour to allow the cheesecake to firm up. Cut into 9 big squares or 16 smaller brownies when ready to serve!
