This ice cream does need some preparation work, but it is well worth it in my view. Because you’re literally making an artisanal batch of ice cream right in your own kitchen.

I’m not sure what more to say about it other that it’s the finest chocolate ice cream I’ve ever made. So, yes…. It’s very excellent.

Ingredients

To make the ice cream, combine the following ingredients in a mixing bowl.

  • 2 quarts of thick cream
  • 1 gallon of whole milk
  • 4 oz. chopped dark chocolate
  • 1/2 cup sugar (granulated)
  • 4 beaten egg yolks
  • 1/4 cup chocolate powder, unsweetened
  • 1 tbsp extract de vanille
  • a quarter teaspoon of salt

the batter for the cookies:

  • room temperature 1/2 cup salted butter
  • 1/2 cup brown sugar (light)
  • a quarter cup of granulated sugar
  • 1 cup flour (all-purpose)
  • 1 tablespoon oil (vegetable)
  • 3/4 cup chocolate chips, mini

Instructions

  1. Heat the heavy cream, milk, chocolate, and 1/4 cup sugar in a medium saucepan over low heat. Heat until the mixture steams and scalds, but does not boil.
  2. Whisk together the remaining sugar, egg yolks, and cocoa powder in a separate dish. 1 cup of the warm cream mixture, whisked in with a ladle Then return everything to the main pot with a whisk.
  3. Stir the mixture slowly for another 5 minutes, or until it thickens and coats the back of a spoon completely. Remove saucepan from heat, mix in vanilla extract and salt, then chill for 5 minutes in an ice bath. Transfer the mixture to a quart-size ziplock bag and chill for 4 hours to cool fully.
  4. In a medium mixing bowl, combine the butter and sugars to form the cookie dough. Stir in the flour, oil, and chocolate chips until well blended.
  5. Refrigerate dough for 30 minutes after wrapping it in plastic wrap. Remove from fridge after 30 minutes and roll into centimeter-sized balls. Return to the fridge to harden.
  6. Churn the ice cream in an ice cream maker according to the manufacturer’s directions after it has cooled for 4 hours. Remove the dough from the mixer and fold in the cookie dough pieces by hand before scooping into a big freezer-safe container.
  7. Freeze for at least 8 hours, ideally overnight, after covering with plastic wrap. Serve!
