Ingredients

  • melted 1/2 cup unsalted butter
  • 1 cup sugar (granulated)
  • 2 room temperature eggs
  • vanilla extract (two tablespoons)
  • a quarter cup of Greek yogurt
  • 1/2 gallon of buttermilk
  • a third of a cup of all-purpose flour
  • a third of a cup of cocoa powder
  • 1 teaspoon of baking powder
  • a half teaspoon of salt
  • chocolate chips (about 3/4 cup)

Instructions

  1. Preheat the oven to 425°F and place 12 cupcake liners in a muffin tray. If you don’t have cupcake liners, oil the muffin pans thoroughly with butter instead!
  2. Combine the melted butter and granulated sugar in a large mixing basin. To mix the ingredients, whisk them together. Whisk in the eggs one at a time until foamy.
  3. Combine the vanilla essence, Greek yogurt, and buttermilk in a mixing bowl.
  4. Combine the flour, cocoa powder, baking powder, and salt in a mixing bowl. Mix until everything is well blended. Don’t overmix the ingredients. Finally, stir in the chocolate chunks once or twice to evenly distribute them.
  5. Divide the mixture equally amongst the 12 muffin pans using a big ice cream scoop or a 1/3 cup measure. Preheat oven to 425°F and bake for 5 minutes. Reduce the oven temperature to 375°F after 5 minutes and bake for another 15 minutes, or until a knife inserted into the center of the muffins comes out largely clean.
  6. Allow it cool for a few minutes before eating!
