Dirty Chai Muffins

Everyone have a wonderful Monday! Rather than drinking our morning coffees, we’re snacking on these Dirty Chai Muffins. They’re also good for dipping in coffee. Because coffee is a beverage that is consumed on a regular basis.

When I was in college, I worked as a barista and was introduced to filthy chais. Chai lattes (and iced chai lattes, of course) had always been a favorite of mine, but the thought of adding espresso was completely strange to me. I took my first taste of filthy chai gingerly, a skeptic at first. But I was captivated as soon as the cardamom, cinnamon, and ginger aromas laced with espresso struck my mouth. It’s this incredible blend of exotic flowers, nutty richness, and earthy warmth.

With October being the season of warm lattes and hot drinks, it seemed only natural to prepare filthy chai muffins. 

My mother and I went out to supper last week. I took a chai muffin down for her to taste in the vehicle, and she put it in her drink holder to keep it for after our lunch. However, after 5 minutes on the road, her fingers crept down and plucked a piece of the glazed top off. At first, I didn’t think much of it.

But she is the same lady who eats the outsides of Reese’s cups and discards the cores because the peanut butter-to-chocolate ratio is better that way. After a few minutes, I peered down and realized that all that was left was a crumbling muffin bottom, stripped of its glazed grandeur. I couldn’t help but bust up laughing when I saw my mother’s glazed-speckled face.

“So you enjoy it?” says the narrator. I inquired.

She gave a satisfied grin. “Yes.”

Instructions for creating filthy chai muffins

Muffins are really simple to prepare, and these chai muffins are no exception. However, bear the following in mind while producing these babies:

Beat the butter and sugar together until light and fluffy — The secret to any wonderful baked item is beating the butter and sugar together until light and fluffy. This will take 2–4 minutes, but it will make a huge difference in the quality of your muffins (and cookies and cakes).

Measure out the spices – I know, it sounds obvious, but many of you are in the same boat as me. When you look at a recipe, you think to yourself, “OK, I’ve got this,” and then you eyeball the majority of the measurements. However, since the chai spices in this muffin recipe are so potent, you don’t want to use too much or too little of them, so measure them carefully.

Use espresso instead of standard black coffee for a stronger taste – If you’re a coffee fan, try making these filthy chai muffins using espresso instead of plain black coffee. You’ll need the same quantity for each, so go ahead and choose your favorite.

Wait 15 minutes (at least) before glazing the chai muffins — Nothing beats a warm muffin, but you should wait at least 15 minutes before glazing these chai muffins. If you don’t, the glaze will turn into a puddle and run all over the muffin.

Ingredients

  • 5 tablespoons room temperature butter
  • a quarter cup of sugar
  • 1 big room-temperature egg
  • 1 teaspoon extract de vanille
  • 1 teaspoon ginger powder
  • 3/4 teaspoon cardamom, freshly ground
  • 1/2 teaspoon cinnamon powder
  • a quarter teaspoon of black pepper
  • a quarter teaspoon of nutmeg
  • a quarter teaspoon of cloves
  • 1 1/2 tablespoons powdered baking soda
  • a half teaspoon of salt
  • 1 3/4 cup flour (all-purpose)
  • 1/2 cup espresso (made from instant espresso powder) or strongly brewed coffee

To make the glazing

  • a quarter cup of powdered sugar
  • 1 1/2 teaspoons espresso powder (made from instant espresso)*

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit. Set aside 8 large muffin pans that have been greased.
  2. 3 minutes on high in a standing mixer equipped with a paddle attachment, cream the butter and sugar until light and fluffy. For another minute, beat in the egg. Mix in the vanilla extract and all of the spices until everything is completely blended.
  3. Combine the flour, baking powder, and salt in a small mixing dish. In the wet ingredients, alternate adding the flour mixture and the coffee, mixing just until mixed.
  4. Scoop batter into muffin pans in an equal layer. Bake at 425°F for 5 minutes, then reduce to 375°F and bake for an additional 15 minutes, or until golden brown and springy to the touch. Before icing, remove the cake from the oven and let it cool for at least 15 minutes.
  5. To prepare the glaze, whisk together the powdered sugar and espresso until a thick glaze forms. Drizzle over muffins and sprinkle with more espresso powder.

*Depending on how strong you want your coffee taste to be, you may use either strongly brewed coffee or espresso.
