To say the least, this year has been a whirlwind. There’s always lots to do between planning our wedding, Alex’s first year of residency, working on the blog and Foodtography School, and taking care of Tilly.

So, what exactly is a date night recipe?

Those ones that are exactly portioned for two, you know. A great date night meal is easy yet tasty, allowing you to spend more time with your significant other. Maybe it’s because I’ve seen too many versions of Lady and the Tramp, but spaghetti is one of my favorite romantic dinners. Even better, pasta meals are simple to prepare in portions that are modest enough to feed two people.


What exactly is carbonara?

Pasta carbonara is created with simple components that you probably already have in your fridge: pasta, parmesan cheese, eggs, and guanciale (fancy bacon). Simply cook your pasta and combine it with a delicious mixture of eggs, shredded cheese, and bacon while it’s still hot. It comes together fast, but it takes a little dexterity in the kitchen with a few moving pots and pans.

  • 1 tbsp olive oil (extra virgin)
  • 2 garlic cloves, peeled and smashed
  • 1 cup ripped-up bread from the previous day
  • 3 big egg yolks + 1 huge egg
  • a third of a cup of parmigiano reggiano
  • a quarter teaspoon of black pepper
  • guanciale (3 oz) (can also use thick-cut bacon)
  • 8 oz bucatini or thick spaghetti 8 oz bucatini or thick spaghetti 8 oz bucatini
  • garnish with thyme (completely optional)



  1. Melt the butter in a small saucepan over medium heat. 1 tablespoon extra virgin olive oil and 2 garlic cloves, smashed (skins still on). Saute for 1 minute, then throw in the baguette slices to coat. Remove from the fire until golden brown, then set aside to cool slightly.
  2. Combine the egg, egg yolks, parmigiano, and black pepper in a large mixing basin. Remove from the equation.
  3. In a big saucepan over high heat, pour 1 quart of water. Bring the water to a boil before adding the bucatini. Cook for about 8 minutes, or until the pasta is al dente. 12 cup pasta water should be saved for later.
  4. Guanciale should be diced into 12 inch thick slices in the meanwhile. Cook until the fat renders out and the pieces are golden brown in a large saute skillet over medium heat. Almost all of the rendered fat should be strained off, leaving just the guanciale pieces and 2 tablespoons of fat in the pan.
  5. When the pasta is al dente, take it from the boiling water with a slotted spoon or tongs and lay it in the guanciale pan. Stir the spaghetti to absorb all of the drippings.
  6. Using a whisk, slowly drizzle a few tablespoons of the conserved pasta water into the egg mixture. Add the spaghetti and guanciale to the egg bowl and mix to incorporate.
  7. Return everything to the big saute pan, add the remaining 12 cup of pasta water, and simmer, stirring frequently, for approximately 3 minutes over low heat. When the pasta thickens and has a creamy consistency, it’s ready!
  8. To serve, divide the mixture between two dishes and sprinkle with breadcrumbs and herbs. Have a wonderful date night!
