I’m the sort of person that appreciates going out as much as I enjoy staying home. And I like making those evenings when I stay home seem just as wonderful as if I had gone out. I like to keep things warm and inviting, but I also like to spice things up a little.

for the marcona almonds produced at home

  • 1 cup whole natural Blue Diamond almonds
  • 1 tablespoon extra virgin olive oil
  • to taste with salt

for the remainder of the cheese platter

  • blue cheese, 2 ounce
  • 2 ounces sharp cheddar cheese, sliced
  • Manchego cheese, 2 oz., sliced into pieces
  • 1 red grape bunch
  • a handful of crackers of your choice
  • 1/2 cup olives castelvetrano
  • Prosciutto, 2 ounces
  • garnish with microgreens (optional)


in order to prepare marcona almonds

  1. Preheat the oven to 350 degrees Fahrenheit. Using parchment paper, line a small baking sheet. Remove from the equation.
  2. Over high heat, bring a small saucepan of water to a boil. Half of the almonds should be blanched for 30 seconds. Remove with a slotted spoon as soon as possible and let aside to cool somewhat. Continue with the remaining almonds.
  3. Gently pop the almond skin off each almond with your fingertips. To remove any extra moisture, pat almonds with a paper towel.
  4. Drizzle olive oil and salt over the almonds on the prepared baking sheet. Spread evenly and bake for 5-7 minutes, rotating halfway through. When the almonds are softly golden brown, they are ready to eat. Allow to cool slightly before serving. It may be kept in the fridge for up to four weeks.
