Dark Chocolate Peanut Butter Sandwich Cookies

These cookies are the perfect combination of sweet and salty. They’re so deliciously addicting they could be considered a sin, but if you love chocolate as much as I do then there’s nothing to worry about.

I’m now waiting for my trip back to Boston in the Detroit airport. I’ve been on the road for the last week and a half, going from place to place. Then it was over to Chicago to shoot for Ambitious Kitchen. Then it’s on to a blogging retreat in Park City, Utah. I decided to remain in Michigan for a few days when the first leg of my connecting journey home was delayed by two hours, leading me to miss my second connection.

I’m on my way home with a full stomach, a full heart, and a mind eager to go back to work.

It’s remarkable how much time away from your routine can rejuvenate you. I’m really looking forward to what’s coming up in the near future (but more on that later).

Let’s speak about Halloween now. Normally, I despise Halloween. I despise dressing up in a smart but pricey costume only to be surrounded by promiscuous nurses and cowboys (The Dress is now a costume. #meta).

This year, though, I have a selection of treats to get me in the mood for Halloween. These Chocolate Peanut Butter Sandwich Cookies are the perfect place to start. They’re bright, festive, and, of course, tasty.

It’s like a soft Oreo cookie with a center of peanut butter icing. Uhm YES, THANK YOU.

What’s not to like about their small size and super-easy recipe?

And may we comment about the cookie’s consistency? The peanut butter frosting is light and fluffy, but yet salty from the peanuts, and the two cookies are chewy and soft–they remind me more of a brownie than a cookie.

Last week, Rebe and I devoured all but two of these cookies. Ha.

Ingredients

Cookies made with dark chocolate

  • room temperature 1/2 cup salted butter
  • 1 cup light brown sugar, tightly packed
  • 1 big room-temperature egg
  • 1 teaspoon vanilla extract
  • 3/4 cup flour (all-purpose)
  • 1/3 cup cocoa powder (dutch process)
  • a quarter teaspoon of baking soda
  • a quarter teaspoon of salt

To make the peanut butter icing

  • a third cup of peanut butter
  • room temperature 1/4 cup unsalted butter
  • milk (two tablespoons)
  • 1 cup sugar (powdered)

Because of the drizzle

  • 2 teaspoons melted peanut butter

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Set aside two baking sheets that have been lightly greased.
  2. Cream the butter and brown sugar together in a medium mixing bowl until light and fluffy (with a KitchenAid, about 3 minutes. with a manual whisk, about 5 minutes). Combine the egg and vanilla extract in a mixing bowl.
  3. Sift together the flour, cocoa powder, baking soda, and salt in a separate basin. Next, whisk in the dry ingredients until just mixed, being careful not to overmix the dough.
  4. Scoop dough onto cookie sheets with a 1/2 oz cookie scoop, allowing approximately 1.5′′ between each ball of dough. Bake for 8-10 minutes, checking the consistency of the baked cookies halfway through. Allow to cool fully before applying the frosting.
  5. Whisk together the peanut butter, butter, milk, and powdered sugar in a medium mixing basin. Fill a piping bag (or a ziplock bag with the corner cut off) with the frosting and pipe it over the undersides of half of the cookies, then sandwich with the remaining cookies. Drizzle melted peanut butter over the tops of the cookies.
  6. Devour.
